How to prepare celery stew, one of the delicious local and original Iranian stews

Celery stew is one of the traditional, old and original Iranian dishes.

Celery stew is made from minced mutton or beef with celery, mint and parsley.
In some areas, chicken is also used to make celery stew.
Celery stew usually has a slightly sour taste, but the amount of sour taste depends on your mood.
Some cities eat celery stew very sour.
Celery stew has heart, skin, liver, blood pressure control and a number of other properties due to the presence of celery in it, which has many vitamins and nutrients.

Ingredients for preparing celery stew:

Stewed meat: 300 grams
Celery: 400 grams
Mint: 50 grams
Parsley: 150 grams
Onions: 2 medium
Oil and turmeric: enough
Salt and black pepper: enough
Lemon juice or Verjuice: as desired
Tomato paste: 1 tablespoon (optional)

Celery stew is one of the stews that does not contain tomato paste in its main recipe, but if you like, add paste to this stew, because it makes the stew taste and color better.

If you are a vegetarian, you can also use mushrooms instead of meat.


Recipe :
To prepare celery stew, first remove the celery leaves from the stems.
Then, after washing, chop the celery stalks into one to one and a half centimeter pieces and set aside.

Fry the celery and then the vegetables in a frying pan with some oil
Note that celery stalks should not be roasted too much as they will dry out and harden

chop the onion, then fry it with some oil in a saucepan until the onion is soft.
At this stage, add the meat and fry a little to change color and fry a little
Add the salt and pepper to the turmeric and add some water and let the meat cook.

Then add the meat, celery, parsley and roasted mint.

If you wish, you can also add a tablespoon of tomato paste to the meat and onion at this stage. Adding tomato paste makes your celery stew taste and color better at the end.

After the meat is completely cooked, add some salt and black pepper along with sour flavors such as juice, or sour lemon juice about one to a tablespoon.
Finally, let the stew sit on a low heat for another 45 minutes until the oil has set and is fully incorporated.

The important thing about serving celery stew is that it is one of the stews that must be low in water to have a better appearance. After the stew is ready, serve it with rice.
