How to make it Ash-Doogh, a type of local soup made with a delicious dairy product

I learned this type of soup during my trip to Ardabil province
Today I will teach you how to cook this delicious Ash (soup) or local soup. I hope you like it
what is a doogh?

ingredients for Ash-e doogh :
1 cup rice
1 egg
White flour or rice flour: 1 tablespoon
Dough: 2 liters
Baked Chickpeas: 1 cup
Vegetables: (leeks - coriander): half a kilo
Salt as needed
- If you do not have doogh, use 2 kg of sour yogurt with water
ingredients for Meatballs :
Mince Meat
Mint powder
Salt
Oil
Water
How to prepare Meatballs:
Mix the minced meat with some salt and dry mint powder and shape it into a circle.
Then pour them into a glass of boiling water and cook
Pour oil into another bowl and let it heat up, then turn it off and pour two tablespoons of dry mint powder and then add the meatballs.
How to prepare Ash-e doogh:
Wash the rice and soak it in water for a few hours. Then cook it
You can cook rice in Ash at the same time
I cooked separately
Soak the chickpea for a few hours and change the water several times
Then cook the Chickpea with water. You can use canned cooked chickpeas
Choose a pot that has twice the capacity of the ingredients
Pour Doogh into a saucepan and add a tablespoon of white flour or rice flour. Break an egg and beat it and add it to Doogh.
Stir the ash regularly until it boils (about 10 minutes to 20 minutes)
Meanwhile, add Chickpea and rice to Ash
When the ash starts to boil, add the vegetables, but before adding the vegetables, add 1 tablespoon of salt to it. Adding salt at this stage will prevent the green color from returning to Ash.
When the ash is fully boiled and the spice is cooked, remove from the heat, then pour into a suitable dish and garnish with hot mint and stir-fried meat.
