Cinnamon is a major source of income in Sri Lanka.It is mainly in demand abroad.

At harvest, the green immature parts of the pruned cinnamon tree, cross branches and leaves should be removed from the field. The parts thus removed can be left in the field for composting. Alternatively, these cinnamon leaves can be used for cinnamon leaf oil extraction.
The leaves can also be used for oil extraction.
After harvesting the cinnamon stalks should be collected in a shady place and then bundled and taken to the cinnamon processing plant. The cinnamon sticks need to be cleaned first by placing them in a tank of clean water. It also protects the cinnamon sticks from drying out until the peeling process begins.

For example, the rods used to grind cinnamon sticks should be made of brass. Nothing like iron can be used for this. This is because the iron metal reacts with the chemical in the cinnamon bark to turn the bark black. Because of that we have to be careful about that as well.
