How to make two different popular Nigerian meal from corn.

I believe we are doing great at our respective place of work.

Today I want to share with you the two major food you can process from corn which is a major income of a woman beside my house for her upkeep.

She goes to the market, buy some bags of corn and remove the grain from the comb, she does this with the help of her children and other volunteer from neighbors to assist her.

After all these has been done, the maize is soaked in water for 24 hours or boiled on fire for few hours depending in how argent she needs it. These will later be remove from water and taken to where it will be grinded into smooth paste.

When brought home, it will be properly sieve and leave to settle down and ferment.

The thick paste will later be cooked and either used as Eko (corn meal) or ogi ( pap) as popularly called in Nigeria.

These is later sold and the proceed from it is used to take care of the family and herself.

This business is so lucrative but it takes a lot of time and hard work.
