As I told you in my last post, my daughter had her birthday on Sunday, so I always try to please her in everything she asks me for that day, she wanted to eat pizza, the truth is that I have time that I don't make bread, in my classes with the students there were two classes dedicated to the topic of gluten which I already talked about in this post, and another one dedicated to the elaboration of bread, that's why I know the basic principles for the elaboration of artisan bread but in reality the dough for Pizza had not been elaborated

Como les había comentado en mi ultimo post, mi hija estuvo de cumpleaños el dia domingo, así que siempre me esfuerzo en complacerla en todo lo que me pida para ese día, ella quería comer Pizza, la verdad tengo tiempo que no hago pan, en mis clases con los estudiantes habian dos clases dedicada al tema del gluten del cual ya les hable en este post https://hive.blog/hive-174578/@angelik-a/eng-span-what-is-really-gluten-or-or-que-es-en-realidad-el-gluten, y otra dedicada a la elaboración de pan, es por eso que conozco los principio básicos para la elaboración de pan artesanal pero en realidad la masa para Pizza no la había elaborado

Es por eso que consulte un viejo libro de comida Italiana que me regalaron hace ya un tiempo y que en realidad no había usando más que para hojearlo y mirar sus fotos gastronómicas espectaculares de vez en cuando.

So I took the recipe from here, especially the recipe for the dough, to the rest I gave free rein to my gastronomic sense and memory.

Así que la receta la tome de acá, sobre todo la receta de la masa, a lo demás le di rienda suelta a mi sentido y memoria gastronomica.

Para la masa

350gr de harina de trigo
7gr de Levadura
1cda de azúcar
250mL de Agua Tibia

Para la masa

350gr of wheat flour
7 grams of yeast
1 tablespoon of sugar
250mL warm water


Para el relleno
500mL de Salsa para Pizza
150gr de Jamón
150gr de Queso Mozzarela
3 dientes de ajo
1 cebolla en julianas
1 pimentón en julianas
Hojas de Albahaca seca
2 Aji Dulce

For Filling

500mL of Pizza Sauce
150gr of Ham
150gr of Mozzarella Cheese
3 cloves of garlic
1 onion in julienne
1 paprika in julienne
Dried Basil Leaves
2 Sweet Chili

Preheat the oven to 170°.
Precalentar el horno a 170°C

1 First of all we must weigh the ingredients of the dough, once we have everything weighed and measured, we put the yeast in the warm water and the spoonful of sugar, we cover the mixture with kitchen paper or a wet cloth. Let the mixture rest in a warm place for 15 minutes.

  • Primero que nada debemos pesar los ingredientes de la masa, una vez tengamos todo pesado y medido, colocamos la levadura en el agua tibia y la cucharada de azúcar, tapamos la mezcla con plástico de cocina o un trapo húmedo. Dejamos que esta mezcle repose en un lugar cálido por un espacio de 15 minutos.

2 After 15 minutes, once the yeast has doubled its volume, we mix with the flour in a clean bowl, to form the dough. The dough should come off the fingers easily.

  • Pasados los 15 minutos, una vez la levadura haya doblado su volumen, mezclamos con la harina en un cuenco limpio, para formar la masa. La masa debe despegarse de los dedos con facilidad.

3 We let the dough rest again for 30 minutes. After 30 minutes, we knead the dough to unify the gases produced by the fermentation, for a period of 4-5 minutes.

  • Dejamos reposar de nuevo la masa por espacio de 30min. Una vez transcurrido los 30 min, amasamos para unificar los gases producto de la fermentación, por un espacio de 4-5 minutos.

4 While in a pot we put a spoonful of oil, garlic, half of the pepper in cubes and the sweet peppers to be fried, when they have blanched, we add the pizza sauce to unify flavors, we let it cook for about 5 minutes. Once the 5 minutes have passed, we let the sauce rest.

  • Mientras en una olla colocamos una cucharada de aceite, el ajo, la mitad del pimenton en cubos y los aji dulces a sofreír, cuando hayan blanqueado se le agrega la salsa para pizza para unificar sabores, se deja cocinar por espacio de unos 5 minutos. Una vez pasado los 5 min dejamos reposar la salsa.

5 Once the dough and sauce are ready, we proceed to assemble the pizza, we stretch the dough with our own hands leaving a thickness of less than 6 cm so that it cooks evenly, once this is done we place the sauce evenly throughout the dough.

  • Una vez lista la masa y la salsa, procedemos a armar la pizza, estiramos la masa con nuestras propias manos dejando un grosor menor a 6 cm para que se cocine de manera uniforme, una vez hecho esto colocamos la salsa de manera uniforme por toda la masa.

6 Once the dough is covered with the sauce, we place the ham, cheese, onion, paprika, basil leaves and a crushed garlic.

  • Una vez cubierta la masa con la salsa, colocamos el jamón, el queso, la cebolla, el pimentón, las hojas de albahaca y un ajo machacado.

7 Once the pizza is ready, we proceed to bake it for 15 minutes at a temperature of 170°C

  • Una vez lista la pizza, procedemos a hornear por espacio de 15minutos a una temperatura de 170°C.
