Semolina Jaggery Pudding | Meethi Semiya Recipe - The quick and easy to make dessert

Desserts are something that we all like. Nothing like a good sweet something to nibble on after a heavy fulfilling meal. Semolina in India is usually a go to for desserts. Its versatility ensures that a variety of dishes can be made out it. Today I am going to share the recipe for Sweet Semolina Pudding using Jaggery. Jaggery is a sort of Sweet / Sweetening agent that is very common in Asia. Its made from the sweet Sap of Coconut/ Palm trees.

While traditionally this dish is made using Jaggery exclusively, I have chosen to add a bit of Sugar to kind of bring the taste levels to modern expectations of a Sweet Dish. But if you are health conscious you can easily skip the sugar bit and stick with Jaggery Exclusively.

Ingredients

1 cup Semolina | Semiya
1/2 cup Jaggery | Gur
1/4 cup Sugar | Cheeni
2 psc Cardamom | Elachi
1/4 cup Dry Fruits (Cashew/Almonds/Raisins/Pistachios)
2 tbsp grated coconut.
4 tbsp Ghee
3 cups Water

The Recipe

Roast the Semolina in 1 tbsp of ghee. Set aside.
Roast the dry fruits in 1 tsp of ghee. Set Aside.
Crush two Cardamoms. Set Aside.
Boil the water and add the crushed Cardamom.
Add the Semolina.
Bring flame to low and cover with lid and let Semolina simmer till all the water is absorbed. The Semolina should be soft and succulent.
Mix the grated coconut into the Semolina. Mix Well.
Add the Jaggery and Sugar into the mixture. Mix well.
The color should change to a brown tone.
Keep Simmering on low flame till it dries and becomes sticky.
Add the dry fruits to the mix and mix well.
Garnish Some more dry fruits on top. Serve Hot.

There ! Yum Semolina Jaggery Pudding. As a sweet dish especially if made with Jaggery Only as the sweetening agent , this dish is good kids. They will love the taste and it does NOT harm them they way commercial sweets and pasties and chocolates will do !
