Cheat's Risotto
There was a goodly amount (still is) left from Sunday's roast lamb. Summer's a little elusive. Well, that's not entirely true: it's tempered with the south easter which is the seasonal and prevailing wind for this time of the year. We always forget. And always lament.
Consequently, it feels cooler than it is and makes standing over a bubbling pot less of a chore.
This leftover meal is a favourite we've not had for years. Well, truth be told, the last time we had a lamb roast was in the "proper" Sunday Supper era.
I have been making this for years and never, until pretty recently, twigged (doh!) that it is a risotto of sorts.
Essentially, it's rice (arborio) started with sauteed onion and garlic and a little white wine (I used to use red, but it makes the dish grey) using the left over gravy as stock (use initiative if there isn't enough...).
During the cooking, I add chopped peppers (capsicums) and often carrots if I have them and towards the end, diced leftover roast.
For deeper flavour, I add fresh rosemary and a bay leaf. Finally, sprinkle fresh parsley over a lovely bowl of comfort.
Serve with a salad or beans or other green vegetable.
