Easy summer potato salad recipe!!!

Hello, my friends. Today I will suggest a very tasty, healthy, easy, and filling meal that I make every time I am hungry but I am not in the mood for cooking or I want to eat something light. It is a potato salad containing 3-4 standard ingredients and whatever other vegetables I have in my fridge at that time. Furthermore, this potato salad is ideal as a lunch for the summer months that the environment is very hot and cooked food makes us feel even hotter.

The basic ingredients I use for this potato salad are potatoes, eggs, tomatoes, cucumbers. Then I open my fridge and see what vegetables I have and I add them to my salad. This time I used one carrot, one light green pepper, one zucchini, one fresh corn and one fresh onion. Also, I added 1 piece of feta cheese, 3 barley rusks, olive oil, a little apple cider, vinegar and salt

The first step in making the salad is to cook the potatoes and boil the eggs. I usually bake the potatoes in the microwave along with their skins for about fifteen minutes in the high power.(to cook the potatoes faster, carve them with a knife) At 7-8 minutes I turn the potatoes over to cook them evenly. If you don't have a microwave oven or you think it's not healthy to cook in it, you can boil them even though the taste and the texture of the will be very different. Then simply boil the eggs for 5-6 minutes to allow the yolk to be solid.

While the potatoes and eggs are cooked start preparing the vegetables. Cut the tomato, the cucumber, the onion and the carrot into very small pieces. For me it very important the vegetables to be very finely chopped because I think this is the secret for a tastier salad.

Lately, I've been using raw zucchini in my salads because it has a lot of vitamins and it is very healthy. I don't really like its taste if it is not cooked that's why I cut it into very thin slices with the peeler in order not to understand its taste.

5 minutes before the potatoes are cooked, I added the corn to the microwave to be cooked along with them.

When the potatoes and eggs are ready, I leave them to cool for 5 to 10 minutes and then peel them and cut them into small pieces. Then I take the yellow of corn and all the ingredients are ready to come together and create a fantastic taste.

In a large bowl, I put all the chopped vegetables, the egg, the white cheese( I used feta), and the nut broken into small pieces. Then I add a lot of olive oil, apple cider and salt. With a wooden spoon, I mix all the ingredients very well and my salad is ready to eat it!!!

That was for today. I think you all have most of these ingredients at home so you can very easily try to make my summer potato salad. Even if you don't have them, you can use what you have available at that time. I did not write quantities on purpose because you can put more or less of each ingredient according to your taste.
