Yummy Alfajores!!

Hello, hello, here we are again with a rich sweet that in my Venezuela we know as Alfajores in other countries they are called Macarones.

It's a kind of cookie, filled with arequipe, decorated with grated coconut, recently I did not have or did not bring me the arequipe, I filled it with cake meringue, they were also very rich, you have to have ingenuity.

They are very delicate, since they are very fragile, they fall apart in the mouth, uhmm, well I'll stop provoking and show you how I prepare them, because everyone prepares them in their own way and this is the way of @zhanavic69

Under each photo, although you can see very well the step by step, I will write the same, many learn in a visual way, others like to read the step by step, others all ha ha ha.

For the dough:

    1. 2/3 cups of all-purpose wheat flour
    1. ½ cups of Cornstarch
  • 2 tsp. baking powder or granulated yeast.
  • 200 grams of margarine.
  • ¾ cup of sugar.
  • 1 tsp vanilla or coconut essence.
  • 3 egg yolks (I use the whites for sighing)
  • 1 tablespoon of lemon peel.

To fill and decorate:

  • Arequipe (main) or other can be: jam or meringues.
  • Shredded coconut, colored candies or granulated chocolate.

If they have a mixer that kneads, or a kneading machine or on hand, that's fine too.

First beat the sugar with the margarine, then the yolks, the lemon rind, the vanilla, up to here you can use a mixer if you are going to use it.

Before continuing previously or on the spot, mix in a bowl: the flour, cornstarch and baking powder, and once everything is mixed with a trowel, use a strainer each time you add this.

Then knead it with your hands for a few minutes, store it in a container and refrigerate it for half an hour or until you go to prepare the cookies.

After some time we take the dough out of the fridge, we separate it in part, on the table we put some wheat flour, with a rolling pin we extend the dough that is not too thick nor too thin (to avoid it to break), you use a cookie cutter they should be circular, you can use something else but it should be circular and the size to your liking, as I make them for parties they ask for small ones, they call them bite, because they eat it in one bite ha ha.

Place on a tray already greased and floured. It is taken to the oven at a very low heat, in this everyone knows their oven, but you have to be aware, I leave it 15 minutes or so. They will be soft. Do not let them get toasted.

Once they are ready, take them out of the oven, wait a few seconds, tap the tray and you will see that they take off by themselves.

And let's fill, the alfajor is composed of two cookies, just put the arequipe in one of the cookies, put the other cookie, and then pass it through the grated coconut, this will be on the edge.

Ya veras mi @sacra97 cuando yo vaya para el puerto porque se que voy a ir cuando salgamos de todo lo negativo y te enseñare son ricas y es facil se ve tedioso pero cuando ya lo haces te horras en comprar jajajaja
