South African Traditional "Potjiekos"
While camping with the kids this weekend, we challenged them to make dinner for a group of 40 people, comprising of parents, siblings and friends.
As it was outside, with no power, they had to make their own fire, chop all the veggies and learn how to manage the heat on the fire and properly season their potjie!
Ingredients:
14kg lamb stewing meat
1kg onions
2kg mushrooms
3kg of vegetables: mixed patty pans, potatoes, baby marrows.
4 Cloves garlic
Lamb stock
12 Bay leaves
1 Cup of sunflower oil
Salt and pepper to season
4 Packs of mutton soup
Instructions:
Build your fire, manage it until it makes coals and heat the pots.
Chop the onions and vegetables while waiting for the fire, cut the mushrooms in half.
Add the oil, stewing meat and onions and sear the meat until brown.
Add the lamb stock, garlic and bay leaves with a few cups of water and let it simmer for 2 hours.
Add your mixed vegetables and let it simmer for another hour.
Add the mushrooms, let it simmer for a further half an hour.
Add the mutton soup and leave it on a low heat until the flavor has developed, the meat pulls apart from the bone and it is ready to serve.
Serve with rice and season with salt and pepper to taste!
