Over the weekend, me and my sister decided to make baked sushi, we've been craving for a different dish that's new to our usual meals. During the pandemic, baked sushi became a hit from what I've seen in different social media platforms. Everybody seems to love this dish, everybody seems to be craving for it. Aside from preparing the ingredients, I'd say that this dish is easy to make.

Ingredients:
  • Cooked rice
  • Roasted sesame seeds
  • Ripe mango
  • Kani or crab sticks
  • Cucumber
  • Salt
  • Sugar
  • Rice wine
  • Furikake
  • Japanese mayo
  • Laver
  • Cheese
The first step is to prepare the ingredients that are needed to be thinly sliced and cut. The kani and cucumber are sliced thinly and the mango is cut in cubes.

Next is to season the cooked rice. With this you mix the rice wine, salt, sugar, furikake, and sesame seeds in a bowl together with the cooked rice. The amount of the ingredients can vary to your liking.

From the cut ingredients, these are mixed with the japanese mayo. I don't like mayo in general but this one's an exception. After mixing everything, the next step is to layer everything and ready it for baking.

We used the molds I used for baking loaves and breads, the size of this molds is good for 1 person. In the container, you first layer the seasoned rice and leave space for the cut ingredients for the next layer.

My favorite part! Adding cheese for the top-most layer. We used a quickmelt cheese (substitute for mozarella) for the thick and sticky layer of cheese. The other layer of cheese used was grated parmesan, this will add more flavor to the baked sushi. For the last step, it is to put the container in the oven. Since everything is already cooked or can be eaten raw, we just waited until the cheese on top melts to golden brown.

Here's the finished product ✨We added the strips of laver on top for garnish. This can be eaten as it is like a rice meal but I learned over the weekend that it's eaten in a certain way. You would have to wrap a spoon of this on the laver and enjoy eating.

We were able to finish the two servings in one day and ate the other plate the next morning. I can't believe that it'd be heavy same as the meal that we usually eat. It can actually pass as a snack but the layer of cheese makes you feel full as you eat.
