Salmon in Coconut Milk and Vegetable Spring Roll

Happy weekend, everyone! Let me share to you our delicious Independence Day dinner yesterday: Salmon in coconut milk, vegetable spring roll, and fried rice.

(I also drew an art in celebration for the Philippine Independence Day yesterday. 😊 )

First of all, these are cooked by my mother and not me, and so I don't have recipe to share here. I still have lots of things to learn when it comes to cooking. Lol.

First on the list is the delicious salmon in coconut milk. We're used to eat salmon in soy sauce and recently we tried it in tamarind soup dish, and now, we cooked it in coconut milk. Mmmm!!! My mother used real coconut milk and so the dish was more flavorful and creamy.

We ate the salmon with fried rice. Perfect combination! Oh, I forgot to mention that the dish smells so good! I can imagine this being served on a coconut shell with banana leaf as plate while eating it beside the beach during sunset. 😍

Next is the fried vegetable spring roll. Of course, the main ingredients are vegetables like carrots, string beans, etc. My mother also added bits of tofu as an alternative for meat. She also made a vinegar with pepper as dipping sauce for this snack.

I wish we can have this dish more often. Lol.
