Fried Rice with Raisins and nuts
One of my tricks to encourage my children to eat more vegetables is to serve them fried rice. It’s savoury, delicious and one of their favorites.The good thing about this dish is, you can put any vegetable available in your fridge.
A day old and cold rice from the fridge is ideal in making fried rice to prevent from being soft and mushy. A drop of soy sauce is added to add color. Cashew nuts and raisins are a delicious addition to the dish. It gives a sweet, crunchy nutty taste, inspired from the Middle eastern rice.
Ingredients
Cold rice
Garlic
Onion
Soy sauce, 1 tbsp
Capsicum, any color
Cabbage
Carrot, jullienne
Green beans
Cashew nuts, roasted
Black raisins, ½ cup
Corn kernels, frozen, ½ cup
Peas, frozen, ½ cup
Salt
Pepper, ground
Preparations
- Wash and chop and dice the vegetables.
- In a preheated pan, heat oil and saute garlic and onion until soft and aromatic.
- Add the vegetables. Carrots, green beans and capsicum. Stir well and cover with lid for a few minutes.
Add the soy sauce and let it sit for a minute.
Next, add the cold rice and stir well.
- Then, add the remaining vegetables. cabbage, raisins, corn kernels, peas and cashew nuts, if using. Continue stirring until vegetables are cooked.
- Adjust your seasoning with salt and pepper and it’s ready to serve.
Be careful in introducing nuts in young children, If unsure, Please remove the nuts in their serving plate. Do not leave them unattended while eating.
It’s simple but high in nutrition, A flavorful and easy dish you can try with your leftover rice.
