Filipino Rice Congee (Arozcaldo) / Asian Rice Congee
Arozcaldo is a filipino rice congee. This dish cooked until the rice thickens overtime, To be more flavorful, it is Infused with chicken - ginger broth. Topped with fresh scallions and hard boiled egg for additional flavor and to look more pleasing. It’s a good meal during the cold season and mostly served as a snack or breakfast.
In this recipe, I made a natural chicken broth by boiling the chicken and adding various vegetables and spices.
To make the Broth:
Chicken
Celery
onion
Garlic cloves, crushed
Bay leaves
Ginger, crushed
Black peppercorn
Water
Salt
To make Rice porridge:
Jasmine rice, 1 cup
Shredded chicken
Ginger
Garlic, minced
Onion, chopped
Fish sauce, 3 tbsp
Green onion, chopped
Toasted garlic, optional
Chicken broth or water
Ground black pepper, to taste
Preparations
- Make a broth. Place the chicken in a deep pot with enough water, Add the vegetables and spices. Bring it to a boil and simmer for 45 minutes. Drain and save the broth. Shred the chicken and set aside.
In the same pot, Add oil, saute ginger, onion and garlic until aromatic.
Add the shredded chicken and rinsed rice, Saute for a few minutes.
Next, add the fish sauce and stir, let it sit for a couple of minutes.
Then Add the chicken broth, Bring to a boil and lower the heat, cook until the soup thickens.
Adjust your seasoning and garnish with toasted garlic, scallions or boiled egg or boiled on top.
The consistency of the porridge depends on the amount of water or stock you add in.
A delicious and easy Asian rice porridge / congee to enjoy any season.
