Delicious Chicken Estofado
Cooking chicken estofado is very similar to an Adobo dish, though Estofado has a sweet, tangy and mild salty taste. A delicious dish that has a unique flavor on its own.
In this recipe, I did not include the brown sugar in the end as i feel that it is already sweet from the canned pineapple juice. Certainly, marination of the meat for a few hours with the below ingredients will bring more flavor to the dish.
Ingredients
- Chicken, medium cut
- Garlic
- Onion
- Bay leaves
- Star anise
- Ginger, optional
- Water, 1 ½ cup
- Oyster sauce, 3 tbsp
- Vinegar, 2 tbsp
- Canned pineapple juice, 3/4 cup
- Brown sugar, optional
- Potato, quartered, optional
- Salt and pepper, to taste
Preparations
Saute garlic, onion and ginger until fragrant.
Place the chicken and stir cook until brown.
Add the Bay leaves, star anise, pineapple juice, water, oyster and vinegar. Bring to a boil.
Then add the potatoes. Simmer until the meat is cooked and the liquid has evaporated, about 25 minutes.
Adjust your seasoning with salt and pepper.
Garnish with chopped onion leaves and Enjoy.
You can also use pork with this dish if you prefer.
It's a simple and delicious dish you can try for a home cooked meal.
