Healthy Gluten free Almond Cupcakes for Deserts

Yesterday I was in a mood to have something sweet. I have cut down on my sweet consumption almost completely, and just once in a while indulge, with care that refined sugar is completely off from my diet.

With the mood, I thought of making something at home itself. I am not very good in the kitchen so I had to pick up something simple and easy to make. The thing with me is, I start with a lot of zeal but then as it progresses it fizzes off. This happens only in the kitchen and not in other parts of life....hehehe....If it is simple and quick, I will be able to manage it till the end, if it gets complicated than half way I lose interest. So let me share with you all, very simple and easy to make Almond cupcake recipe.

Ingredients:
1 1/2 cup Almond flour
1/4 cup Coconut sugar (if you are really not much worried about the sugar part, you may go ahead with whatever is convenient for you.)
2 Spoons Honey
4 Eggs
1 spoon baking powder
1 tspoon olive oil
Butter for greasing the pan
Almond flakes for garnishing

Recipe
Separate the egg yolk and the white part and whisk both of them separately
Mix the egg yolk in the almond flour and mix it well, add sugar, honey and mix all of it very well, it will become a little hard, but that's ok.

Once it is mixed up well then add the egg white, and mix all of it very well. Do not over mix it, once the bubbles start coming up, you may stop.

Grease the baking pan with butter and then add up the batter in each mold and on top you may add up some almond flakes for a good presentation.

Preheat the oven at 200 degrees for 10 minutes. You may put the cake then for baking at 300 degrees for around 15 minutes. Before removing you may poke a knife to see if it's done. If the knife comes out clean means it's ready.

There you go some yummy cupcakes. Absolutely healthy with no gluten and refined sugar.

I finished 2 of them right after lunch and then when hubby came back from office, he had another 2. So today we are left with 1 each....hehehe. With this my sweet quota is done for atleast a week now. Let's see what I can make next time.
