Helados súper cremosos - paso a paso // Super creamy ice cream - step by step
Greetings friends today I will share with you a recipe to eat a delicious ice cream without leaving home, its texture and flavor has nothing to envy to those who sell in the ice cream shops. Thanks to this quarantine every day new presentations are incorporated to our enterprise.
To prepare it we will use 2 tablespoons of vegetable shortening, 1 teaspoon of CMC, 1 teaspoon of xanthan gum, 300 grams of sugar, 150 grams of powdered milk and one liter of water. You can see that this is a lot of sugar for a liter, but with this recipe we are going to obtain 2 liters of ice cream.
The first thing we are going to do is the base for our ice cream, for this we are going to mix in cmc and the xanthan gum together with the sugar, it is very important to do this step otherwise it will form lumps in the ice cream.
We then melt the butter at low heat, we don't want it to take high temperatures, just melt it.
Then we put the water, the butter and the milk in the blender and we mix, still with the same one in movement we are incorporating little by little the sugar with the cmc and the xanthan gum.
Then we take this mixture to the freezer for 5 hours, when it has a lot of ice crystals we take it out and take it to the blender, we will beat for 5 minutes, in the picture you can see the change in the texture, from a solid mixture we go to a super soft and creamy one.
Then we add 3 spoonfuls of cocoa powder and incorporate it.
To serve we put some chocolate cream on the edge of a glass, we can also put sugar to make it look better, then we put the ice cream.
