Hola queridos hivers amantes de la comida.

Tenía muchas ganas de publicar mis recetas, pero la verdad que estuve unos días sintiéndome desanimada.
Pero lo importante es que aquí estoy, de vuelta, con ganas de seguir preparando deliciosas recetas.

La receta que les comparto se llama Sanfaina. Y es un delicioso entremés, antipasto, bocadillo, pasa-palo o tente-empie. Como prefiera llamarlo, es una comida sencilla típica del Mediterráneo que tiene sus variantes.
Yo como buena venezolana he adaptado esta receta campesina y no le coloco aceitunas como si lo haría un italiano. Pero en fin lo que si está asegurado es que es deliciosa, esta receta la aprendí de un español, casado con una francesa, ellos ya la habían venezolanizado, jajajaja.

La Sanfaina consiste en una sencilla combinación de vegetales que una vez listo se puede servir con pan, casabe, galletas saladas o la base que prefiera.

Los ingredientes:

2 berenjenas medianas
2 cebollas
2 tomates maduros
1 pimentón dulce rojo
Aceite para sofreír
Pasta de tomate
Azúcar
Sal

Paso a paso

Lavar muy bien los vegetales. Cortar las berenjenas en forma de bastoncitos.
Cortar las cebollas , los tomates y el pimentón en forma de juliana, es decir en tiritas largas, todo debe estar separado.

Colocar las berenjenas ya cortadas en una olla con suficiente agua, agregar un poquito de sal y llevar al fuego hasta que hierva, una vez que rompa el hervor apagar, colar y reservar. Apartar medio vaso del agua de las berenjenas. Un dato interesante es que algunos fríen las berenjenas, yo las prefiero hervidas para que queden tan grasosas.

En una sartén o en una olla de boca ancha poner suficiente aceite para que cubra el fondo y sofreír por separado las cebollas hasta que cristalice un poquito retirar y reservar.

Hacer el mismo procedimiento con el pimentón y reservar. Por último sofreír los tomates rápido para que no se conviertan en salsa sino procurar que queden enteros.
Retirar el exceso de aceite de los tomates y agregar las berenjenas escurridas, las cebollas y el pimentón.

Seguidamente agregamos el medio vaso de caldo de berenjena, 1 cucharada de pasta de tomate y una cucharada de azúcar (esto quita la acidez al tomate). Y por su puesto un poquito de sal al gusto.

Removemos un poco tapamos y bajamos la llama a fuego medio y dejamos por espacio de 2 minutos. Apagar y bajar del fuego, dejar reposar y luego envasar el más delicioso antipasto llamado Sanfaina.

I really wanted to publish my recipes, but the truth is that I was feeling discouraged for a few days.
But the important thing is that here I am back with the desire to continue preparing delicious recipes.

The recipe I share with you is called Sanfaina. And it is a delicious hors d'oeuvre, antipasto, snack, pasa-palo or tente-empie. Whatever you prefer to call it, it is a simple meal typical of the Mediterranean that has its variants.
As a good Venezuelan, I have adapted this peasant recipe and I do not add olives as an Italian would. But what is guaranteed is that it is delicious, I learned this recipe from a Spaniard, married to a French woman, they had already Venezuelanized it, hahahaha.

Sanfaina consists of a simple combination of vegetables that once ready can be served with bread, cassava, crackers or the base of your choice.

Ingredients:

2 medium eggplants
2 onions
2 ripe tomatoes
1 red sweet paprika
Oil for frying
Tomato paste
Sugar
Salt

Step by step

Wash the vegetables very well. Cut the eggplants into sticks.
Cut the onions, tomatoes and paprika in julienne form, that is to say in long strips, everything must be separated.
Place the eggplants already cut in a pot with enough water, add a little salt and bring to boil, once it boils turn off, drain and set aside. Set aside half a glass of water from the eggplants. An interesting fact is that some people fry the eggplants, I prefer them boiled so that they are not so greasy.

In a frying pan or in a wide mouth pot put enough oil to cover the bottom and fry separately the onions until it crystallizes a little bit, remove and set aside. Do the same procedure with the paprika and set aside. Finally, fry the tomatoes quickly so that they do not turn into sauce but try to keep them whole.
Remove the excess oil from the tomatoes and add the drained eggplants, the onions and the paprika.

Then add half a glass of eggplant broth, 1 tablespoon of tomato paste and a tablespoon of sugar (this removes the acidity of the tomato). And of course a little salt to taste.

Stir a little, cover and lower the flame to medium heat and leave for 2 minutes.

Turn off and lower the heat, let it rest and then pack the most delicious antipasto called Sanfaina.

I served it with toasted bread. Friends you have to try it.
