Pineapple and Chayote Marmalade

Today I am publishing a delicious marmalade with two flavours and with a high nutritive value. When you use pineapple to make jam you nrrd to combine it because they are expemsive and whith 1 pineapple you make just one jar. I usually combine it with pumpkin and chayote.

The Chayote and the pineapple are fruits rich in magnesium, and potassium and vitamin C. The Chayote is a vegetable ideal for people on diet because it is low in calories. The Chayote made as a juice with lemon is good to clean the kidneys, it helps to expel the kidney stones, and it helps to low the uric acid, bur you can't drink it in excess.

The chayote will give bulk to the pineapple and will fortify its properties. I usually add cinnamon to this marmalade, but this time I will add star anise which it will give a smoked flavour to the marmalade. Prior to the preparation of the marmalade you have to sterilyze the jars. This prepoaration is easy to make and it doesn't take long to cook.

To make this marmalade you need:

  • 1 pineapple
  • 3 chayotes
  • star anise
  • 400 grams of sugar
  • 1/2 lemon
  • Note: this marmalade doesn't need to be added water because it will take time to cook. The pineapple and the chayote provide the liquids needed.

Preparation:

  • wash the pineapple and the chayotes
  • peel the pineapple and grate it with a manual grater

  • peel the chayotes and discard the seeds
  • clean the inside part very well removing hard parts
  • grate them with the manual grater

  • mix the pineapple and the chayote with the sugar
  • add the anis star
  • cook until thickened

  • fill the jars and store. It will last upto a year
  • you can eat with toasts, cookies and as filling for pies

I have never tasted chayotes in jam, but this combination with pineapple sounds great.
