Cookies Filled with Strawberry Cheesecake | Magic in the Kitchen

Some time ago, I made some cookies filed with brownie that looks amazing. For people who love chocolate, they are a delight to the mouth. For people who don't like chocolate, these cookies may not be their first choice. Thinking about it, I asked myself if it was possible to make some cookies filled with chessecake and I searched the Internet and found nothing like what I had in mind.

Thinking about the same technique I used for the brownie cookies, I set to work and prepare these cookies filled with chessecake. They are soft in the center with that delicious strawberry chessecake flavor and crunchy on the outside, typical of a cookie. I was inspired to make these cookies because I bought a cream cheese already flavored with strawberry and without sugar. If you don't get a cream cheese like that, you can add strawberry syrup to the cream cheese to give it that ideal flavor.

These types of cookies are ideal for giving a gift since the person biting into them has a surprise inside. I am sure you will never imagine that it has chessecake filling. If you don't want to make the strawberry filling, you can simply ad vanilla. Keep in mind that the flavor of the chessecake is light and accompany it with another flavor a little stronger, it will make it outstand. It's time to work, find the ingredients, prepare your work table and we'll bake it

Ingredients

For the vanilla dough

  • 140g all-purpose flour
  • 80gr of butter
  • 50g of sugar
  • 1 egg
  • 1 tablespoon of vanilla essence

For the chessecake mix

  • 200g of cream cheese with strawberry
  • 2 eggs
  • 50mil milk
  • 100g of sugar
  • juice of 1 lemon
  • 25gr of cornstarch
  • 25gr of wheat flour with leudant
  • 1 tablespoon of vanilla

Preparation

  • We will begin by preparing the chessecake mixture, in a bowl we add the cream cheese at room temperature and beat it a little so that it is soft.
  • Add the sugar and mix well. Then add the eggs and mix until everything is well mixed.
  • Add the milk and integrate it into the preparation. Add the lemon juice and the vanilla and proceed to mix so that the liquids are well integrated.
  • Add the flour and the cornstarch and proceed to integrate them softly. We will have a soft and thick mixture. This mixture must go to the freezer since, for the final step, it must be able to be handled with your hands and that is achieved when it is almost frozen.
  • It is time to prepare the vanilla dough, in a bowl we add the butter with the sugar and mix.
  • We add the egg and proceed to integrate it very well. Add vanilla or orange peel to the mixture and integrate.
  • Proceed to add the flour and mix well until obtaining a soft and manageable dough at the same time. This mixture must go to the freezer at least 30 minutes before it can be used.
  • With the chessecake mixture almost frozen and the vanilla dough cold, proceed to assemble the cookies.
  • You are going to take 7gr of vanilla dough and crush it in your well stretched hand. Take 10gr of chessecake mixture and form a little ball and place it right in the center of the vanilla dough.
  • Cover the ball of chessecake mixture with the vanilla dough and form a ball.
  • Slightly crush the ball on a plate prepared with flour and butter to prevent the cookies from sticking.
  • Repeat this process with all the mixture until it runs out. The secret is to have the chessecake mixture almost frozen in order to work it.
  • Take it to the oven at 160°C for 25 minutes or until the cookie is golden on the outside.

Serve them as you like, I must say they are delicious by themselves, but with a glass of milk, they are better enjoyed. I was happy with the result, but my favorites are still the cookies filled with Brownie. If you prepare both recipes, tell me how they look and which one you like best.

Por un momento pensé que eran galletas rellenas de diablito, menos mal abrí el post a ver el proceso.
