Dulce de Lechoza o Papaya

1Kg of Papaya
1 kg of sugar
Species (Cloves)
Essence of Vanilla
1Kg de Papaya
1 Kg de azucar
Especies (Clavos de olor)
Escencia de Vainilla
Procedimiento /Process
Primeramente se procede a quitarle la piel a la Lechoza o Papaya, con mucho cuidado porque cuando esta verde la leche que emana suele dar picazón en las manos y puede irritarlas.
Firstly, the skin is removed from the bed or papaya, with great care because when it is green, the milk that emanates from it usually makes the hands itchy and can irritate them.
Luego se coloca con la azucar a fuego lento hasta que ella se cristalice, revisando y revolviendo ocasionalmente.
It is then placed with the sugar over a low heat until it crystallizes, checking and stirring occasionally.
Una vez alcanzado la cocción adecuada se retira del fuego y se deja enfriar para luego colocar en la nevera y posteriormente consumirlo.
Once it has been properly cooked, it is removed from the heat and left to cool and then placed in the refrigerator to be consumed.
