Each person has a different way of cooking chorizos, many of them are boiled in water first so they don't get too greasy later, others are so fascinated by the fat they contain that they simply cook them directly on the grill, I show you below the process I have used for these chorizos, we boil them with little water and for a short time then I put them on the grill and cook them for a good while, to prepare the "canillas" bread I have made them an opening and in a hidden way I have spread mayonnaise and tomato sauce, I hope my Italian chef friends don't read this part because they will bother to add these two sauces, well continuing with the recipe we must make a sauce of herbs and garlic that generally receives the name of chimichurri, we join all our herbs with the garlic and we season it with salt, vinegar and oil, the special touch is to add more coriander than chives and parsley, also another secret is to use sea salt or coarse salt we join all this very well and we can add it to our breads filled with delicious sliced chorizo

Cada persona tiene una manera de cocinar los chorizos de forma variada, muchos suelen hervir un poco en agua primero para que no queden luego tan grasosos, a otros les fascina tanto la grasa que contienen que simplemente lo cocinan directamente en la parrilla, te muestro a continuación el proceso que he utilizado para estos chorizos, los hervimos con poca agua y por poco tiempo luego los coloqué en el grill y cocine por un buen rato, para preparar los panes canillas les he hecho una abertura y de manera oculta les he untado mayonesa y salsa de tomate, espero que mis amigos chef italianos no lean esta parte porque se molestaran por añadirle estas dos salsas, bueno continuando con la receta debemos hacer una salsa de hierbas y ajo que generalmente recibe el nombre de chimichurri, unimos todas nuestras hierbas con el ajo y la sazonamos con sal vinagre y aceite, el toque especial es agregar más cilantro que cebollín y perejil, también otro secreto es utilizar sal marina o gruesa unimos muy bien todo esto y se lo podemos añadir a nuestros panes rellenos de unos deliciosos chorizos rebanados

Did you also make the bread or just the fillings?

I love baking bread at home, but this one I bought because of its size, lately I have been using my small oven and I can only bake smaller pieces, Thanks for commenting
