Hive Creative Contest: Mickey- Vegetable-Scrambled Egg/ Egg Omelette

Hi fellow hivers and fellow participants of this Egg-citing cooking challenge.
It is actually my first time entering this contest. I often make scrambled eggs and sometimes make omelettes but it was my first time using the combination of ingredients you’ll see
below. I prepared the eggs in two different ways basically using the same set of ingredients. This is typically what happens in my household -same ingredients, same flavors but my kids “can’t” eat it “that way”. I’ve been trying to incorporate more vegetables in our meals. They added good fluff, fullness, flavor and of course some vital nutrients to the egg dish. To encourage the boys to eat those greens, I needed to add “Mickey”. Just to let you know that while the avocado is on the kid’s plate, it eventually ended up and always ends up on mom’s or dad’s plate. Apparently there’s no cartoon character that will get them to eat that. Not even Mickey.

On my tray is my set of ingredients:

  • 3-4 eggs (3 shown on tray but I added another afterwards)
  • a few stalks of greens🥬 (your preference)
  • one carrot🥕
  • one cucumber🥒
  • small cup of threaded gouda cheese🧀 (your preference of melting cheese is okay)
  • half of an onion🧅
  • a clove or few cloves of garlic 🧄 (not seen on tray but was added afterwards)
  • a small or half of an avocado🥑 (not seen on tray but was added afterwards).
  • a small cup or small bowl of riced cauliflower (this ingredient was new to my kitchen. I had it as “rice” and was now trying it with egg. It received a warm welcome).
  • a few spoons of olive oil🫒(or your preference of oil)
  • salt to taste (optional)
  • a slice of lemon (to maintain the color of the avocado, not on the tray but used afterwards).

The utensils and equipment used were a knife, fruit baller, vegetable curler, a spoon, an egg lifter, cutting board, a fork for whisking, bowls and plates and a frying pan.

First let’s prepare our garnishes.
We’ll use the cucumber, half of the carrot and the avocado.

1.Wash and insert the cucumber in the vegetable curler. Move in a motion as if you’re sharpening a pencil. Do several “shavings” then complete curling them manually.

2.Do the same with the carrot. Make as many as you like and then set them aside on a plate.

3.Peel a part of the avocado. (neater than I did 😆) Use the fruit baller to make a few balls. The motion is similar to fetching a few scoops of ice-cream. Sprinkle the avocado balls with lemon juice to maintain the color. Set them aside for when the meal is cooked.

Method for the omelette (half of the ingredients):

  1. Wash and peel the vegetables that require peeling.

  2. Use the leafy part of the greens. Chop finely.

  3. Chop a piece of the carrot in small pieces.

  4. Finely chop the onion and garlic.

  5. Arrange the ingredients on a plate so it’s easy to add them while cooking.

On our plate (from left to right), we have cheese, chopped greens, chopped onion and garlic, riced cauliflower, chopped carrot and more greens.

6.Break and whisk eggs. Whisk several times so as to make them fluffy.

7.Heat the frying pan. Keep it on a low flame. Add just enough oil to grease the base of the pan.

8.When it’s hot enough, pour half of the amount of egg in the pan. (The other half is to be scrambled)

9.Add half the ingredients from the plate in order of your preference. Add salt to taste (optional). When the egg is slightly firm, fold it in half to enclose the vegetables and cheese. (Optional-sauté the vegetables before adding them to the omelette).

10.Gently turn or flip the omelette to the other side. (I like mine well- done) Occasionally and gently, stick different areas of the omelette to facilitate faster cooking of the ingredients inside the omelette. After a few seconds, remove it from the pan.

11.Cut omelette in slices.

12.Garnish with cucumber and carrot curls.

Method for the Mickey-Vegetable-Scrambled Egg (using the remaining half of ingredients from the plate)

1.Using the same pan, and a low flame, add enough oil to grease the base of the pan.

2.Sauté the vegetables and add the remainder of the eggs. Add salt to taste if you wish.(you can do this with or without the cheese. I only had enough cheese for the omelette). Stir for a bit and then remove from the pan.

3.When its cool enough, place the scrambled egg in a Mickey mold on a plate. Gently remove the mold and garnish with carrot curls and avocado balls.(Here, I made a kind of ribbon 🎀 with the carrot. Garnish as you like)
