Chocolate Coffee Bread

Using some brewed coffee and chocolate chips, I whipped up these simple mini loaves. They make a perfect snack or a gift, not to mention that with the glaze, they taste just like chocolate-glazed doughnuts. Have a wonderful weekend!

For the bread:

1 1/4 cups flour
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/4 cup cocoa powder
1/2 cup butter, softened
1/2 cup sugar
1 egg
1 tsp vanilla extract
1/4 cup olive oil
1/4 cup coffee, brewed
3/4 cup chocolate chips

For the glaze:

1 cup powdered sugar, sifted
2 Tbsp water
1/2 Tbsp vanilla extract

Preheat the oven to 350 degrees and grease 3 mini loaf pans. In a medium bowl, whisk together the flour, salt, baking soda, baking powder, and cocoa powder.

Cream together the sugar with butter in a separate large bowl. Add in the egg, and then add in the vanilla, olive oil, and coffee.

Mix the dry wet ingredients until combined. Stir in the chocolate chips.

Spoon the batter into the prepared pans and bake 30-40 minutes or until a toothpick inserted in the centers comes out clean. Let cool completely before glazing.

To make the glaze, in a medium bowl, whisk together the sugar, water, and vanilla. Pour over the tops of the mini loaves.
