Easy Ways to Serve Eggs Coconut Milk Sauce [Achehnese Food]

Dear foodies...

Last year in almost all countries the economy was unstable, Covid 19 was a terrible specter, and had an impact in almost all sectors of public activity. I myself had to close my traditional Rujak business due to regulations from the local government starting to impose social distancing and stopping crowd centers to avoid the virus that continued to spread in Indonesia at that time.

Tahun lalu hampir di seluruh negara perekonomian tidak stabil, covid 19 menjadi momok yang mengerikan, dan berdampak hampir di segala sektor aktivitas publik. Saya sendiri harus menutup usaha Rujak Tradisional dikarenakan aturan dari pemerintah setempat mulai memberlakukan sosial distancing dan penghentian pusat keramaian untuk menghindari virus yang terus menyebar di Indonesia saat itu.

At a time when the economy and income are increasingly difficult, the need for food for families is of course very vulnerable if they are unable to improvise with reality. One of the foods that is easy to get is eggs as a side dish, besides the price is still affordable with unstable economic conditions.

Di saat ekonomi dan pendapatan semakin sulit, kebutuhan makanan untuk keluarga tentu saja sangat rentan jika tidak mampu berimprovisasi dengan realita. Salah satu bahan makanan yang mudah didapatkan adalah telur sebagai lauk, lagi pula harganya masih terjangkau dengan kondisi perekonomian yang labil.

Mengolah telur menjadi lauk sebagai kebutuhan makanan memang sangat meringankan pengeluaran belanja, apalagi pekerjaan tidak ada dan perekonomian bertahan dengan membuat postingan di hive blog saja selama waktu penyebaran virus itu.

One of the side dishes made from egg products that I learned at that time was coconut milk soup. This menu is not too difficult to learn, moreover, the need for food is one of the priorities during a pandemic.

Salah satu lauk dari bahan olahan telur yang saya pelajari saat itu adalah Telur kuah santan. Menu ini tidak terlalu sulit untuk dipelajari, apalagi kebutuhan makanan menjadi salah satu prioritas di masa pandemi.

This time I want to share how to cook coconut milk gravy eggs for a delicious lunch side dish. This menu is very suitable to be prepared on the end of the month, when the economy is running low while waiting for the beginning of the month to arrive to receive a salary as an employee for sure. Here are the ingredients and steps that must be taken to cook coconut milk soup.

Kali ini saya ingin berbagi cara memasak Telur kuah santan untuk sajian lauk makan siang yang lezat. Menu ini sangat cocok disiapkan pada tanggal akhir bulan, ketika ekonomi semakin kian menipis sambil menanti awal bulan tiba untuk menerima gaji sebagai karyawan pastinya. Berikut adalah bahan dan langkah yang harus dilakukan untuk memasak Telur kuah santan.

Ingredient

4-5 chicken / duck eggs, 750 ml thick coconut milk, 1 stalk of curried leaves, 1 lemongrass, crushed
4 green chilies, halved / oblique, 1 starfruit (replace 1 tomato, if not available) cut into pieces, 1.5 teaspoons of salt (according to taste), 1 / 4-1 / 2 teaspoons of sugar sand (according to taste)

Bahan-bahan

4-5 butir telur ayam/bebek, 750 ml santan kental sedang, 1 tangkai daun temurui/kari, 1 batang serai, memarkan
4 buah cabai hijau, belah dua/ptg serong, 1 buah belimbing wuluh (ganti 1 buah tomat, kalau tidak ada)potong-potong, 1,5 sendok teh garam (sesuai selera), 1/4-1/2 sendok teh gula pasir (sesuai selera)

Coconut milk seasoning:

1 tablespoon of ground shallot, 1/2 tablespoon of finely ground garlic, 1/2 tablespoon of finely ground green chilies, 1/2 tablespoon of ground coriander, 1 teaspoon of powdered turmeric, 1/4 teaspoon of ground pepper.

Bumbu kuah santan:

1 sendok makan bawang merah halus, 1/2 sendok makan bawang putih halus, 1/2 sdm cabai rawit hijau halus, 1/2 sdm ketumbar bubuk, 1 sendok teh kunyit bubuk,1/4 sendok teh merica bubuk.

Step

Boil the coconut milk, add ground spices, lemongrass leaves, temurui / curry leaves to a boil while stirring so that the coconut milk doesn't break. Season the salt & sugar, sugar as a substitute for flavoring.

After boiling, put the eggs one by one & give time lag between one egg and another. Wait for the first egg to be shaped & hard, then enter the next egg. Do it until all the eggs are entered, don't forget to stir gently so you don't break the texture of the eggs.

After all the eggs are entered & cooked, then add the green chilies & tomatoes / starfruit. Cook briefly, correct taste & turn off heat. Add a few pieces of salted fish and serve as a menu for the family at home. So what about foodies, it's interesting to try right ?!

Langkah

Rebus santan, tambahkan bumbu halus, daun serai, daun temurui/kari sampai mendidih sambil diaduk-aduk supaya santan tidak pecah. Bumbui garam & gula pasir, gula sebagai pengganti penyedap.

Setelah mendidih, masukkan telur satu persatu & beri jeda waktu antara telur yang satu dengan yang lain. Tunggu telur yang pertama berbentuk & keras, baru masukkan telur berikutnya. Lakukan sampai semua telur masuk, jangan lupa sambil diaduk-aduk pelan agar tak pecahkan tekstur telur.

Setelah semua telur masuk & matang, baru masukkan cabai hijau & tomat/belimbing wuluh. Masak sebentar, koreksi rasa & matikan api. Tambahkan beberapa potong ikan asin dan sajikan sebagai menu buat keluarga di rumah. Nah gimana foodies, menarik untuk dicoba bukan?!
