How about the bitter taste? With this cooking method, still in bitter taste?

Yes, its bitter taste is it's characteristic, so it is important to make it tasty, not to remove the taste. If anyone wants to reduce the bitterness, first skin must be peeled and marinate with salt for an hour, Then squiz the released water and then cook.

I also have mixed feelings about bitter gourd. I know it's healthy but sometimes the bitter is overpowering. A fried preparation from besan is one of the few ways I like enjoy this vegetable. Yours looks like a tasty recipe. Thanks for sharing.
