Trust me guys the picture above is of a Soup I made and it is indeed delicious. I had a loaf of cabbage lying at home and I had no clue what I was supposed to do with it so I decided to make a Soup out of it. The first choice of Soup that came to my mind was a Veg Clear Soup but then I decided to go with a Veg Manchow Soup which does require a little bit extra effort but since it incorporates a lot of flavours it should turn out ok.

First thing's first I chop the Cabbage and some onions into thin cubes as thin as I could and sautee them in a frying pan with a little bit of Oil. Then I added some slices of Carrots into the Pan and fried them together. I also had some Capsicum but since I don't like Capsicum a lot I did not use that at all.

The next phase of cooking was to put all the Sauteed Veggies in a pot and let them caramelize slowly and while it does that add little water to it slowly. Add in some chopped Ginger and Garlic to the mix as well as some spices like Cumin and Coriander. put some more water into the mix and add some salt to it and let it simmer in low flame.

In the meanwhile make a slurry out of cornflower, chilly sauce, and soy sauce. I would have preferred chilies but since I did not have any I went with chilly Sauce. Let it simmer for 3-5 Minutes and check the consistency of the soup. If it has a thick consistency then taste the soup and check if it needs more salt or not. If it needs salt then add some or if it doesn't then just add in some Ground Pepper and just let it simmer for 1 more minute.

And your Soup is ready to Eat.

The colour of the Soup turned out this way because of the extra Soy Sauce I put into the mix because of which is slightly reddish black in colour. It is indeed Delish.
