[Esp-Eng]🐟🍲 Pescado frito con puro sabor margariteño / Fried fish with a pure margariteño flavor 🍲🐟
Ingradientes:
4 ruedas de pescado (utilicé tonquicha que es un pescado de carne blanca)
Harina de maíz
Sal y pimienta negra
Aceite para freír
Cúrcuma
Como contorno: arroz amarillo, ensalada de repollo y zanahoria, tajadas de plátano y papas fritas.
Ingredients:
4 fish wheels (I used tonquicha which is a white meat fish)
Cornmeal Salt and black pepper
Oil for frying Turmeric
As an outline: yellow rice, cabbage and carrot salad, banana slices and French fries.
Paso a paso / Step by step
First we season the fish with salt and freshly ground black pepper, then we pass it through corn flour, this will not only form a crunchy layer, but this way the oil will splash less and the kitchen will get less dirty from fish.
To paint the rice yellow, use freshly grated turmeric, which in addition to adding color will add a special flavor, then we prepare it as we normally do, we fry it first to seal the starch, and for 1 measure of rice we will add 2 of water .
We wash and disinfect the carrot and cabbage, I usually do it with water and lemon juice, then we finely chop the cabbage and grate the carrot, add mayonnaise, salt, pepper and if you want a touch of sugar.
As I wanted to recreate beach food a bit, I also fried some slices of banana, although they usually offer tostones in the beach restaurants of my town, this time I couldn't get a green banana to make them; but the sweet taste of the slices always makes many palates happy and the French fries could not be missing either.
