I confess to you that when I was a child, Creole arracacia was not one of my favorite tubers, I used to get it out of soups, my mother always told me that as the years went by, tastes change and that when I was old I would surely like it and, as always he was not wrong I love it and every time I have the opportunity I buy it, today I decided to prepare a cream and add a little broccoli to it.
Arracacia is a tuber rich in vitamins and minerals, we can use it to make creams, soups, puree or add it to stews, this time I wanted to repower the cream more with broccoli.
🍲¡Ahora vamos manos a las ollas! / Now let's get to the pots!🍲
2 apios criollos
1 tallo de brócoli y unas ramitas
1 ramita de cebollín
1 tallo de ajo porro
3 dientes de ajo
1 ají dulce
1 cucharadita de curry en polvo
1 cucharadita de paprika picante
Aceite de oliva
Semillas de ajonjolí
Agua cantidad necesaria
2 Creole arracacia
1 broccoli stalk and a few sprigs
1 sprig of chives
1 stalk of garlic joint
3 garlic cloves
1 sweet pepper
1 teaspoon curry powder
1 teaspoon of hot paprika
Water required amount
Step by step / Paso a paso
🍂We separated the twigs from the broccoli stem, I only used a few branches and the rest I reserved for another recipe, the stem as it is a little harder I cut it into slices so that the cooking would be faster.
🍂We remove the skin from the arracacia and then cut them into slices to make the work of the blender easier, I tell you that recently my blender was damaged and they were charging me $20 to repair it and Uncle Hugo in those days came to visit me and repaired it , had the cable broken and replaced them with one from an old iron.
🍂 We put the arracacia and broccoli to boil with enough water and, we add a little salt.
🍂We chopped the onion, the garlic joint, the chives and the sweet pepper, I reserved a little bit of chives for decoration, I used these vegetables because they were the ones I had in the fridge.
We fry the vegetables, this time I added a little curry powder and hot paprika because they are spices that I love, then we add them to the pot.
🍂 When all our ingredients are soft, we let them rest for a while and then we blend them.
¡Lista nuestra deliciosa crema! / Our delicious cream is ready!
To finish, I added a drizzle of olive oil, sesame seeds and chives.I hope you liked it and are encouraged to prepare it ...😉
