Vegan lunch for today

Hello beautiful foodies! Today I cooked a vegan recipe for our lunch. Sautéed mung beans and fried beetroot. Rich in protein and vitamins, A good food to fuel our body in our daily chores.

Mung beans, lentils, beets are one of our staple foods as it is easy to cook, healthy and budget friendly. Furthermore I had posted a couple of times, how I prepared my beetroot Thoran, so today I will only share how I cooked my simple mung bean curry.

So let's get started.

Ingredients:

Mung beans 1 cup
Onion 1 medium
Garlic 2 cloves
Ginger (crushed) 2 inch
Curry leaves 1 sprig
Cumin seed 1/2tspn
Tomato 1 big
Pandan leaves 1 pc.
Turmeric powder 1/2 tspn.
Coriander leaves a handful

Boil mung beans, till soft.

Heat oil in pan, add in cumin seeds, curry leaves & onion saute till translucent.

Add in garlic, ginger, chili & pandan leaves.

Saute for 2 minutes in a low flame.

Pour in boiled mung beans.

Add in salt & turmeric. Stir. Put to lid.

Add in tomatoes. Stir.

Put to lid. Cook for 15 Min. In a low flame.

slightly reduce water by opening the lid , still in low flame.
Adjust salt if necessary,
Stir occasionally.

Add in coriander leaves to enhance the flavour.

The curry and beetroot are ready for lunch.
