Caulifower & Black Eyed Beans Coconut Cream Curry

I'm loving the weekly Natural Medicine Plant Power Cooking Challenge | Week #3 | Come Join Us!!
overseen by the excellent plantbased chef @justinparke, as it gets me out of my comfort zone with some difficult ingredient combos to choose from.
I've also discovered some fabulous new dishes and my menfolk who are big carnivores, have not once complained, in fact they've tucked in heartily and even asked for seconds!

I could easily switch to a plant based diet if I lived alone, as the health benefits are numerous and some quite surprising, like relief for those suffering from Arthritis, have problems with Urinary tract infections as well as Mental Health illnesses, to name but a few.

Back to cooking, and I'm sure you've guessed by now that my choice of ingredients from Week #3's list is:

  • Cauliflower and Coconut

I used fresh Caulifower florets and combined it with Black Eyed Beans for added fibre and protein, cooked in Coconut Cream to make a fabulously fragrant Curry full of nutrients.
Served with Basmati Rice and toasted Coconut flakes, this was the most delicious Curry I've had for a very long while; quite a statement for someone living in Durban, a coastal tourist city on the east coast of South Africa.
Our city has the highest density of people whose forefathers hail from India, so you can understand that curries is one of our city's specialties!
If you ever come to Durban, never leave without having eaten a curry from one of our many good Indian restaurants.

Something you will find in most Durban gardens is a Curry Leaf Tree; these leaves are a must-have in any good curry and we are fortunate to have two of these small trees.

Caulifower & Black Eyed Beans Coconut Cream Curry

Ingredients

  • 2 tsp Cumin seeds
  • 2 Tbsp Coconut oil
  • 1 Onion diced
  • 4 cloves Garlic crushed
  • 1 piece Ginger grated
  • 4-5 Tomatoes diced
  • 1 Tbsp Medium Masala
  • 1 tsp organic Turmeric
  • 1 fresh Cauliflower broken into florets
  • 1 can Black-eyed Beans drained
  • 1 can Coconut Cream
  • Fresh Curry leaves & fresh Coriander Dhania
  • Green Chilies if you like your curry really hot
  • 1-2 cups Basmati Rice cook in usual fashion
  • 3/4 cup Coconut flakes toast under grill in oven

Lightly toast Cumin seeds in coconut oil, reserve half for adding to rice.
Add Onions & Garlic and sautee till transparent.
Add Ginger, Tomatoes and Spices and cook till Tomatoes are soft, adding salt to taste.

Add Cauliflower, Beans & Coconut Cream, cover with lid and cook till liquid is somewhat reduced and cauliflower is done, but not too soft.

Add toasted Cumin Seeds and toasted Coconut flakes to cooked Rice.

Add Curry leaves and fresh Coriander to curry before serving and enjoy!

Good day @lizelle, what a wonderful curry dish, looks delicious .
Such healthy ingredients, especially the Turmeric, I take a supplement of it everyday, it's supposed to be excellent for reducing inflammation . I am able to get the fresh turmeric, but only occasionally at a local farmer's market during the warm months. Cauliflower is a veggie I just love and eat it often and grow my own. Boy is it good.

Always so nice seeing you @farm-mom! Fresh Turmeric is excellent but also hard to find here so I buy the organic powdered one. You're right about it being a very good anti-inflammatory; I make Golden Milk with it, and even add it to fresh Ginger tea, it's very good stuff🙂

Good morning @lizelle.
I do the same with adding it to herb tea, I never make any milk. I just drink almond milk cold. So what? you just warm the milk then add the powder, do you add honey or something else? Golden milk sounds good, the little ones may like it too.

It's raining here but mild temp, 5:45am, still dark. I have to figure out the time difference. @thebigsweed explained the seasonal differences.

Morning @farm-mom (although it's lunchtime here), I add it to hot milk but also grate fresh ginger root in, add honey (you could use your Maple syrup) and a cinnamon stick, really delicious!

Cauli makes a really good curry! It was a very spicy weekend just gone by not so, first your spicy mince curry and then this vegan version which I'm sorry you didn't get to share with us;)

Another fantastic dish of curry Lizelle, over the years with and without meat different vegetables used curry dishes always win over in my home.

Only difference is after preparing main dish I use dough in dollops on top then bake the bread over the dish, egg mixed with spices brush onto dough for different flavoured breads. Family are not rice fans slight change each time never use a recipe book.

Brush dough with butter, garlic & herbs, or use egg, herbs or spices, whatever taste you wish to try. Curry mix in bottom of roast pan, dollops of bread dough on top, ends up similar to bunny chow with fresh bread 😄

You will enjoy it, bottom of bread soaks in the flavour remains moist, top crisps up with another taste to enjoy. I never use recipes, cook whatever comes to hand 😄 or into the head....

Black eye beans are we cook frequently but its combination with cauliflower is totally new for me. Your preparation and presentation are very illustrative.

I actually wanted to combine the caulifower with chick peas but had none, so this was an accidental combination which turned out really good! Thank you for stopping by @chetanpadliya 🙂

Haha not a good idea looking at foodie blogs when one hasn't eaten yet😉 We like our curries hot but not that hot to kill the flavour. One can adjust the spices and use a mild Masala, fortunately we have excellent spice shops in every big shopping mall so are spoilt for choice!
