Suji Khaman: Savoury Semolina Steam Cake

literally Khaman means fermented and basically, Khaman Dhokla is a fermented food. But it is not possible to wait for 12 or more hours for the fermentation process so sometimes we make it instant.
Actually, Khaman Dhokla is made by using gram flour but this Suji Khaman is another instant version of Khaman.
Making this Savoury Semolina Steam Cake is very easy and can be prepared in about 45 minutes.

Making of Savoury Semolina Steam Cake

Ingredients

  • Semolina 1+1/2 cup
  • Tomato 1 no and beans if available
  • Lemon juice of 1 lemon
  • Green chilli 3-4 nos
  • Mustard seeds 1 tsp
  • Sesame seeds 1 tsp
  • Sugar 2 tbsp
  • Curry leaves
  • Green coriander
  • Baking powder 1/2 tsp
  • Baking soda(Eno) 1 tsp
  • Vegetable oil 1 Tbsp
  • Water

Procedure

  • Make a smooth batter with semolina by adding about 3 times water.
  • Add salt, sugar and chopped vegetables to the batter.
  • Add lemon juice and mix well.
  • Rest it for 1/2 an hour.

  • Grease the tray with oil and keep it in the steamer.
  • Now add baking powder and baking soda and mix gently, pour in the tray.
  • Cook in a steamer for about 20 minutes. 15 minutes on high-medium flame and for 5 minutes on low to medium flame.
  • Meanwhile, heat oil in a Kadhai(heavy bottom pan) and crackle mustard seeds and Sesame seeds then add split green chillis and curry leaves. ( Keep it aside for garnishing)

  • After 20 minutes check if dhokla is ready by inserting a knife, it should come out clear without sticking batter on it.

  • Cooldown and cut into pieces.
  • Garnish with fried green chillis etc as prepared above.
  • Serve it hot with any chutney, sauce or tomato ketchup!!

Dhoklas are one of my favorite all-time foods. Yours looks absolutely delicious, and that steamer tray is absolutely perfect for preparing this dish. The curry leaves on top, I can smell it now!!
