Sweet Potatoes Dessert Soup 😍

In conjunction with supporting the locals, I had recently attempted groceries purchase from online. One lady advertised her sweet potatoes and I was tempted. So yup, I bought some from her. :) And two I had steamed and ate them. The rest were used to boil delicious sweet potato dessert soup.

Sweet Potato Dessert

We really love to drink soup, be it salty, herbal or sweet. This one is definitely sweet soup, suitable for an evening healthy snack, but we can eat it whole day. There are many ways to boil this dessert, sometimes just the basic soup with sugar, some will be added coconut milk and 'sago' but this time, I wanted to add some ginger and red dates, making it healthier for our body. And some rock sugar for extra sweetness, but totally optional as the dates and potatoes are themselves sweet. But I know the children will love some sweetness on the soup, so, just a little rock sugar will do.

Ingredients

A bit of rock sugar, one slice ginger, 5-6 red dates, the sweet potatoes (any kind, any types, any colour). Mine were purple sweet potatoes and yellow sweet potatoes.

Peel and cut them into chunks

Place all ingredients into pot

Place all into a pot except the rock sugar, then add water, bring to boil for around 20 minutes or till the sweet potatoes are soft, depending how big the cut-size are. Lastly, add rock sugar.

Serve, yummy!

img_0.8191881323027198.jpg The soup is purple in colour due to the sweet potatoes, my spouse and I love to drink it warm, the boys love to add some ice-cubes for chilled cooling dessert. This was my first time adding red dates, and I safely said, they went so well with this dessert. Next up, I will want to try to add coconut milk into this dessert, although more fattening, but I know it will level up the whole dessert dish.

What an ingenious way to prepare sweet potatoes; I never would have thought of it. I have eaten them baked, cut lengthwise, slathered in butter and sprinkled with cinnamon sugar, but in a dessert soup...Never seen it until now. I'm pretty keen to give it a try although I guess I'll have to make it first though!

Thanks for enlightening me to this alternative method of preparing sweet potatoes. I think this will be getting tried out in my kitchen!
