Food food food / Blessings 🌈
The day started somewhat gloomy, with alot of changes and adjustment again due to the start of Conditional Movement Control Order (CMCO), children stay at home, online classes, restricted movement, activities not allowed, etc. However, I also decided to make it less gloomy, be cheerful and giving thanks for people around me, for life in general. At the same time, praying and blessing those who had lost their loved ones to various diseases including Covid19.
Blessing on the way
Mother-in-law dropped me a line saying she had cooked our favourite soy sauce pork belly and said she would send over. Then, I told her in order to ease her and let her rest after cooling, I would go over to pick up the dish. We are so blessed, it was very very yummy. She added in hard-boiled eggs too for extra protein, even made from scratch 'sambal belacan cili' for us, which we usually added lime juice, and this would be perfect dipping sauce for the soy sauce pork belly. We had superb lunch, I added one vegetable dish, and of course our staple food — rice.
Blessing out
Knowing mother-in-law loved curry puffs, I ordered curry puffs for us all, from a home-grown business. It starts by a mother recently from home, selling curry puffs and also other sweet soup desserts. We absolutely love her curry puffs which are generous with fillings. Made fresh on the day.
Back to breakfast of the day
It had been awhile I didn't do French toast and the boys asked for it today. Not sure whether is my version of French toast same with all of you, mine was cooked this way:
Whisk 4 eggs in a plate, add some sugar. Whisk again till sugar melted. Cut 4 slices of bread into smaller pieces and soak them in the egg mixture, coating every part and ensure the egg mixture absorbed into the bread too. Heat up butter in a pan. Pan fry each piece till cook. Ready to eat.
Yummmm - I'll have the lean meat from the pork belly, the sambal and the curry puffs! 😁
Coincidentally we also had french toast today! 😊👌
I'll admit it's the pork belly with hard boiled eggs that caught my attention.
I miss this dish very much. My dad always cooked this at home even if there is no celebration.
It's just nice enjoying it with the family
