A Witch in the Kitchen: "Yellow Pea Vegans Meat Croquettes"

Hello Dear Witches...!

It's about time to start eating healthy at my house, the December disasters and their delicious meals are over, and they have left me a few pounds too much, so this week I said no more, and I will continue in my fight to stop eating meat, or at least reduce it to the minimum, it's a little difficult to stop when all your life you have enjoyed it. However, it's not impossible, and I've already seen that you can get delicious vegan recipes, which is a great thing.



Last week my mother brought home a couple of packets of yellow peas, and I must confess that I hate lentil soup, so this would not be a recipe I would prepare with them, after thinking and thinking what to do with them, and because of their similarity in texture to chickpeas, I decided to prepare some pea croquettes, which can also be made into hamburgers, and which were also delicious, even more so than the lentil meat I have already prepared.



With a somewhat long preparation for my taste, but quite easy and besides the result is great, so, it's worth trying. But come with me and I'll show you how to make this yellow pea meat. Enjoy! .


Ingredients


  • 500 gr of yellow peas.
  • 100 gr of finely chopped chives.
  • 4 large finely chopped peppers.
  • 3 chopped garlic cloves.
  • 2 tablespoons of lemon juice.
  • 3 tablespoons of coconut vegan yogurt.
  • 2 tablespoons of minced garlic.
  • 1 Tbsp of common salt.
  • 1 Tbsp of ground cumin.
  • 1/4 teaspoon of turmeric powder.
  • 1/4 teaspoon of ground black pepper.

    • Preparation time: 4 Hours
    • Baking time: 5 Minutes per kibble or burger





    • What makes the preparation of this meat more tedious is the process of hydration of the pea grains, for this after choosing and washing well the peas we leave them in soaking for at least 4 hours, after this we drain them very well and process them, I use a manual mill, however they can use a blender or a processor, the result will be the same.



      With the grains of peas already ground, we proceed to season, we start adding the chili, garlic, scallion and garlic porro, and then add the dry seasoning, salt, cumin, pepper and turmeric.



      We continue adding the vegan yogurt (you can substitute some vegetable milk if you wish), the lemon juice, and we start mixing, with the help of our hands it is ideal, because this way you can feel the texture of the mixture, and know if it is necessary to add a little more yogurt or milk depending on what you are using. Since we have our dough compact and we can form our croquettes or hamburgers, we only have to form them and fry them in enough hot oil, until they are golden on each side.



      They can be baked or grilled, which in my case must have been the case, however at home everyone loves them fried, and so I decided to make them, the truth is that this way they are more delicious, and cook faster too. Accompanied by a good salad, along with a chickpea hummus and a spicy guasacaca, this was my lunch of the day, and a healthy option for everyone at home, really a good choice for these yellow peas.


      I still have a packet and a half left at home, and I have no idea what other recipes to make with them, so I accept your suggestions!
