Thursday? Really?

This week seems to have just flown by. It's been busy and by yesterday evening, it felt loke today should have been kitchen day. But wait, Monday was kitchen day because of no electricity and tomorrow is Friday and really is kitchen day.

So, fitting my week into tjree instead of four days has made things a little hectic. So, some catching up from the weekend, and specifically from the market and even more specifically, two of my market pals.

He, who is the source of lemons and limes, gave me a bushel sized bunch of coriander from his garden, it made sunday supper easy. Carrots, left over chicken shreds, courgettes, onion and garlic in the wok; a quick pesto with coriander, garlic and toasted almonds, all finished off with fresh lime and, for he who needs heat, chilli jam.

Happily, there is still lots of fresh coriander, so more dishes demanding dhanya on the menu in the coming days.

Then, Trish. She and I often trade. She loves my cottage cheese. I love her Tzatziki. This week, she had a new product. Well, two, actually.

This two tone hummus was the hero of Monday's meatfree supper of roasted vegetables. One is beetroot and the other red roasted pepper. Each is different. Both equally delicious. I don't know which I prefer.

I kept the big vegetables separate from the roasted peppers to which I had added some of that coriander pesto.

It was a winning combination all round.

My Tuesday lunch was simple: hummus(es) and warmed sourdough rolls and slices of cucumber. Absolutely delicious. No pics. I was too hungry. Next time. There will be a next time.

Weeks seem to swing by to quickly, always playing catch-up in one way or another, living with the stress of outside world does not help either I'm afraid.
