Trying Something New: Pancit Canton Omelette

Every dinner time always comes with a familiar question like: "What should I cook tonight?" 🤔
Most of the time, I look at what's already available in the kitchen and let those ingredients lead me.
One evening, I didn't want to cook the usual dish.
Two familiar ingredients are in our kitchen, pancit canton and eggs.
Both were nothing new.
So a pancit canton omelette is what formed in my mind.
Ingredients

• 1 pack Pancit Canton (any flavor you used)
• 2 medium eggs
• 1 cheese (quickmelt or processed cheese)
• 1 small red onion
• 2 cloves garlic
• 1 tbsp cooking oil (for frying)
• bell pepper - for garnish
Cooking process

• Start by finely mincing both the onion and garlic. These would add aroma and flavor to the omelette base.


• After that, in a bowl, cracked the eggs and added the minced onion and garlic. Then poured all the pancit canton seasonings and mixed everything well until fully combined.

• Next, boil water in a pot and cook the pancit canton until done. Once cooked, drain it properly to remove excess water.


• While the noodles were still warm, add them to the egg mixture. Mix everything thoroughly until the noodles are evenly coated and well blended with the eggs and seasonings.



• Heat a pan, and add enough oil to prevent sticking. Pour the noodle-and-egg mixture, and let it cook undisturbed for a while. Once the bottom started to set, place the cheese in the middle of the omelette. Then fold the omelette in half to cover the cheese. (At this point, I realized that the pancit canton was a lot! It was quite big and hard to close. But with the help of another ladle, I carefully flipped it and managed to cook the other side successfully. 🥳)





And that's it! I garnished it with fried garlic and bell pepper, then added some ketchup on top. Then slice it open to reveal the melted cheese inside.
Result & Taste Test
When I tasted it, the outside had just a slight crispiness from the egg, but overall, it was soft because of the inside that was packed with pancit canton.
Honestly, I didn't like it that much. It wasn't bad, but it wasn't something I would crave again.
Maybe because the flavors changed. The pancit canton, which I usually enjoy on its own, seemed to lose its unique taste once it was mixed and cooked with the eggs.
When eaten separately, each one keeps its own identity, its own flavor.
But if they combined, they became something new.
But not necessarily better. That's for me. 🤭
Anyway, still nothing went to waste.
We ate it all.
I didn't even ask my hubby what he thought... lol. But judging the empty plate, I guess he liked it.
Maybe this dish just wasn't for me.

Sarap, lasang pancit canton
Great idea to combine noodles with some eggs and bake it, that is the first time I come accorss something like that. Looks like perfect comfort food!
