HOMEMADE RICE CAKE WITH ORANGE ZEST

Since today's special tribute day to all mothers in the world. I cooked my mother's favorite RICE CAKE OR BIKO NA MALAGKIT WITH ORANGE ZEST

What I love in this special kakanin is that it's being made simplier from a glutinous rice,coconut milk and a brown sugar,but I added a simple twist on it,I slightly adding it with an orange zest which add flavors and made the rice cake smells citrusy..
Here's what you'll need to make this
2 cups of glutinous rice (washed and cooked)
1 1/4 cup of brown sugar (or you can use muscovado sugar)
1 cup of coconut milk
Zest of orange fruit( grated skin of orange fruit🍊)

Here's the procedures in making a tasty glutinous rice cake

I cooked first the glutinous rice with water in a pan or rice cooker (slightly undercooked)

In a separate pan,simmer coconut milk,brown sugar and salt until thick.Sti it thoroughly.

I mixed the rice into the sweet coconut mixture until it becomes sticky.

After finally simmered it, transfer it in a plate and let it cool.

You can topped it with latik or coconut curds for another extra flavor..
Whenever we have a family gatherings or any occasions at home biko or glutinous rice cake is always present on the table.Its always a staple dessert of my family during celebrations.

yummy biko πŸ˜‹ I haven't tried eating biko with orange zest, I only tried eating biko with kalamansi zest.
