Easy Peasy Viennese Stir-Fry Allerlei - Fruits And Veggies Monday (DD 10.02.2020)

Allerlei is a german word for "all sorts of" and in this recipe, everything goes in mixing whatever veggie ingredients you like. The ingredients are really simple... you may have them all in your fridge and aside that it is so simple to make, it is delish too! You can have it as main dish or a by-dish. This dish can be eaten with a block of any cheese and if you want, with sliced baguette. The fried potatoes are a bit solid and heavy, and if you add more of them you could consider this as your main dish. So let´s see what my allerlei ingredients were ....

Viennese Stir-Fry Dish

3 medium potatoes, peeled and steamed til soft
1 red onion, sliced
3 cloves of garlic, crushed
1 cup of steamed broccoli
1 cup parsley leaves
1 cup spring onions, sliced
1 cup red pepper, chopped

salt and pepper
Olive oil
Soy Sauce

Preparations:

Cut the steamed potatoes into cubes and fry them in a pan with 1 tablespoon olive oil under medium heat. Keep on stirring until potatoes are golden brown in color, set aside in a bowl and add the steamed broccoli. In the same pan, stir-fry the crushed garlic with 1 tablespoon olive oil followed by the sliced red onion, fry until slices are soft and pale in color. Add this to the potato bowl..Stir-fry the rest of the ingredients, spring onions, red pepper, parsley until they are soft. Add the potatoes to the pan, mix all carefully and season with salt and pepper, then sprinkle 1 tablespoon of soy sauce to the fried veggies . Adjust the seasoning if necessary. Arrange in a platter and serve hot. With sliced baguette and cheese, this is perfect as a snack or main dish.

Indeed you are very right.... I normally food shop without a list and I just see fruits and veggies on the spot particularly I like to get the fresh ones and you can see them from their appearance. But then, there are times when I am at home already, I do not cook immediately, I cook spontaneously and just look at what I have on the fridge and from there, I decide what to cook. !
