If I could save time in a bottle
The first thing that I'd like to do
Is to save every day till eternity passes away
Just to spend them with you...

The opening lines of the whimsical old song by Jim Croce speaks of how many of us feel at times not so!

Time is a precious commodity, which is why I'm sharing a super speedy but superlicious Zesty Bean Breyani with you all today.

SO to start off with, I am not fond of cooking with canned foods, but when I tasted this Breyani that a work mate shared with me in the office a long time ago, I knew I would be opening a can of beans or two from time to time.

Nothing could beat this for a speedy and fulfilling meal - healthy too as beans are excellent for controlling cholesterol.

Quoting from Healthline.com

Beans and legumes are the fruits or seeds of a family of plants called Fabaceae. They are commonly eaten around the world and are a rich source of fiber and B vitamins.
The Bottom Line
Beans and legumes are some of the most underrated foods on the planet.
They are excellent sources of dietary fiber, protein, B vitamins and many other important vitamins and minerals.
There is good evidence that they can help reduce blood sugar, improve cholesterol levels and help maintain a healthy gut.
Not only that, but eating more beans and legumes as a source of protein instead of meat is also environmentally friendly.

But, we don't have much time so let's get right to the business of putting together our Zesty Bean Breyani!

INGREDIENTS

  • 1 cup Basmati Rice
  • 1 can brown Lentils in brine drained
  • 1 teaspoon Organic Turmeric
  • 1 Onion diced
  • 1 teaspoon Jeera (Fennel) seeds
  • 2 tablespoons Wet leaf Masala
  • Ginger & Garlic
  • 1 can Tomatoes - Indian style
  • 1 can Butter Beans in brine drained
  • 1 can Sugar Beans in brine drained
  • 1 can Chickpeas in brine drained
  • Cilantro

METHOD
Cook rice in usual fashion, add lentils & turmeric.

Sautee onions & Jeera in oil, add tomatoes, garlic & ginger, masala and lastly add beans.

Layer rice mix and beans in serving bowls and microwave on high to heat through.
We're in a hurry remember, so we cannot wait for the old oven to do its job:)

To serve, toss lightly to mix, place in a mold and carefully turn out onto serving plate.
Garnish with Cilantro and serve with a grated Carrot, Cucumber & Onion Salad.

Yum, it's early morning here and this looks so tasty :) Serious comfort food my friend! Beautiful presention and color, a fantastc idea. I'm sure hubby was pleaed with this gourmet meal!

The final plating was photographed outdoors, amazing how the colours change in natural light compared to the camera flashlight! It's a real jiffy meal to put together if you enjoy spicy foods.

Time is indeed precious, so I don't mind some shortcuts when necessary! Especially with how healthy beans are, as you shared above. Many people don't have the time or energy to cook them from scratch, so having a few cans handy can be a great way to give them a try. I love the combination of all of the different varieties in this. Sounds delicious and perfectly satisfying!

You not going to believe this Lizlle, I just made Indian food to, lol. Curry lentil, to be more specific, with rice and cauliflower. Anyway, I love your version and I must try it too. Indian food is one of my favorites and I can eat it any time. Although I prefer to make my own, because the one in restaurant is too greasy and spicy. Well I am saving your recipe for sure 🍅😍🍅

Curry lentil with rice and cauliflower sounds delicious Lena! As you know by now I just love Indian food as well but I'd better make something not spicy next week as I've been a bit stuck on that theme lately;)

I do love that song, and although I am not a fan of all Brayani, my Wife who grew up in India makes a nice mild one that I do love, that said I do love how you presented the dish

It is a lovely old song but then I enjoy all Simon and Garfunkel songs;) Funny my hubby enjoys a curry but he's not too keen on breyani yet I really enjoy it! Thanks for stopping by:)

I preferred Bryani over curry actually myself lol we all have different tastes

Time is definitely a precious commodity! I’m like you, I prefer not use use canned food but there are some occasions when I don’t have the time to pick, wash and soak them. I’m guilty of using canned soup for flavoring sometimes. 😁

I like that this meal is quick and healthy! Looks pretty filling too!

We all need more hours in the day not so, although someone once said to me that it's us who try to squeeze too much into our days;)
I often use soup powders to add flavour and thicken gravies as it's just so much faster and tastier especially stews/casseroles.
