Fruits and Veggies Monday | The Quirky Kumquat! Marmalade and Sweet Bread

Have you tried a new fruit or veggie this week?



If you’re like me the weekly visit to the market is a quick one! I speed through like a bird on a mission!

I used to find myself shopping on auto-pilot, selecting the same tried and true veggies and fruits, but not anymore! I’ve found that by picking just one new item each trip I have a lot more fun in the kitchen! It encourages me to do a bit of research and get more creative with meal planning! Mr. Bird enjoys it as well. You should try it, I think you’ll be pleasantly surprised! This week I spied a fun little fruit, a member of the citrus family of fruits.


The Kumquat

Kumquats grow on small trees or shrubs and are similar to an orange. This sweet little fruit is full of fiber and rich in Vitamin A and C. A smart fruit to help boost your immunity heading into the cold winter months. Used in jams and jellies, cakes and pies, it’s a truly a versatile fruit. They may be tiny; even a bit quirky, but they really pack quite a punch!


No jam or jelly!


We had a crisis in the Bird nest! Morning muffins without jam would just not work. Perfect timing, time to make marmalade!


Bird’s Kumquat Marmalade

  • Fresh Kumquats (1 cup)
  • Fresh Orange (qty 1)
  • Orange Zest (2 tbsp.)
  • Maple Syrup (6 tbsp.)

Sweet English Muffins

  • Almond flour (6 tbsp.)
  • Baking powder (1 ½ tsp)
  • Orange Zest (2 tbsp.)
  • Butternut Squash pulp (6 tbsp.)
  • Flax Egg (qty 2)
  • Maple Syrup (3 tbsp.)
  • Almond Milk (3 tbsp.)

The toughest task…


was to slice, dice and remove the seeds from each fruit. You don’t want seeds in your marmalade, lol The orange needed to be zested and juiced. This adds even more flavor! Stir all ingredients into a small saucepan, set on low and let it cook! It’ll take a while, no rush! We want our marmalade nice and thick.

Why buy muffins…


when they’re so easy to make! After blending the dry ingredients, add in the wet! Don’t forget the squash! I know, I know I’ve shared way too much butternut love lately, lol. It’s just so versatile; I want to spread the news!

Grab those muffin tins…


and fill with dough (about 1/2" thick). Using a fork, I pressed the dough evenly into each tin. Into the oven @ 350 for 13 minutes.

This is a fruit I haven't seen in ages, I made marmalade last week for my @ADSactly Gifts post, but the conventional recipe loaded with sugar! I still want to try making it with a healthier sugar replacement so hubby can enjoy it as well.
Your muffins sound really delicious as well!
Aren't we all like birds in flight at times when we're on a mission, lovely photo ;)

I know, I hadn't seen them for years and hadn't tried cooking with them. Maple syrup really works well with marmalades and compotes, I think you'll be pleased :) Thank you my sweet friend, have a wonderful week

Now I'm craving kumquats! I'm going to have to go search some out now. I only just tried them a few years ago, but they are delicious little gems of citrus. What a lovely idea for marmalade, too. I'm not mad at the butternut squash. I've got plenty to use up myself, so always happy for more ways to use it!

Just one butternut can go a long way, lol I'll be making squash butter next, you're right, you can make so much with it. These little kumquats were quite sweet and great to cook with. Thanks @plantstoplanks :)

What a fantastic idea Mrs. Bird! I never knew what to do with kumquats, although I bought them ones for fruit platter. I remember using them for Thai sauce, but I wouldn't do it again. However, making marmalade is the way to go for sure. I bet it's delicious, especially with those fresh baked muffins. The color looks beautiful too. Well done my Dear 🍊😍🍊

Thank you my dear Lena! You would love the marmalade I think, it's tart and sweet :) I sent some to my daughter in her Thanksgiving care package, I'm anxious to see what she thinks. I hadn't thought about Thai sauce, perhaps I'll give that a try as well, you weren't pleased with it?

They're quite plentiful around here, hopefully you can find some. One squash goes a long with, luckily it's such a versatile veggie :) Thanks @njord!

this was by far one of the best marmalades i have ever tasted!! and i didn't realize that muffin was made with squash. delectable!
