Fruit and Veggies Monday - Wild Garlic Mustard Pizza
Here is an interesting wild edible garlic mustard plant that is blooming everywhere here in Illinois right now. Few people know that is invasive weed actually tastes really good and works great in salads and pesto.
This weekend my fiance and I went out to a remote forest preserve to forage these plants. The farther away from people the better the harvesting is.
We picked about a bag worth of garlic mustard. The nice thing about this plant is there are no poisonous lookalikes and you can nibble taste test it for its mild garlicy taste to be sure.
For this batch we made a pesto sauce in the food processor. Just put a bit of onion, Italian seasoning, arichoke, olive oil and whatever else into the mix.
Once blended it has a nice tangy garlic taste.
Then instead of red sauce we just used the pesto. I did end up putting a tiny bit of red sauce under it just to keep a little tomato tang under it.
And now its done.
Overall it ended up really good though my fiance decided to put more red sauce on top. It has a pesto taste with a hind of salad taste to it. Next up we might try just mixing it in salad. I definitely recommend it as a pesto on a sandwich or on pizza.

I see these plants everywhere now. I also found some wild leeks and some ramp onions. I would say the garlic mustard would work really well on an Italian sub sandwich with its unique taste.

I will be searching for that as soon as we catch up to your spring.
We are in the mountains, so are always a little behind in foliage and
flower blooms.

We started some seedlings as well but here it keeps getting warm then cold again. It's a pretty good veggie but it's also an invasive weed, best to harvest as much.
Oh yeah, take what's there, you know most stuff is seasonal.
Pizza looks yummy. I make my on pizza and will have to look for that plant,
The older the leaves get the more bitter. So its best to harvest as much as possible in the spring.

I'm slowly learning edible wild plants where I live. I know all the mushroom species but not the plant species yet...
