The Recipe for Squishy Delicious Yeast Doughnuts

I had several Hivians request the recipe for these squishy delicious Doughnuts. They require some fussing, but the end result is wonderful!

Squishy Delicious Yeast Doughnuts

Special equipment:

  • automatic bread maker
  • kitchen scale
  • doughnut cutter
  • cookie sheet
  • parchment paper
  • deep frier
  • candy thermometer

Some ingredients are measured by weight, not volume. If you want the doughnuts to have the right texture, it's critical to measure accurately.

Ingredients

Here are the ingredients for Squishy Delicious Yeast Doughnuts

  • 6 Tbsp water
  • 5 oz buttermilk
  • 1 egg, beaten
  • 2 oz butter, melted
  • 16 oz all-purpose or bread flour
  • 2 oz sugar
  • 1 tsp salt
  • 1 1/2 tsp (5 g) regular or quick-rise yeast
  • oil for frying
  • extra sugar for coating

Make the Dough

  • Place the water, buttermilk, beaten egg and melted butter into the bread machine and add all the dry ingredients, except for the yeast.

  • Add flour 16oz flour (use the kitchen scale) in bread machine

  • Make an indentation and add the yeast

  • Set the bread machine on the ‘dough’ setting.

  • Let the dough rise to about double size

Making the Doughnuts

Place the dough on a floured surface and knead lightly. Divide it in half and keep the other half covered. Roll out the dough to about 1/2″ thickness. Use the doughnut cutter (about 3" diameter) to make perfect doughnut shapes. Also, make sure to keep the "hole" for more doughnuts! Once cut, let the doughnuts rise and get puffier.

Put the cut doughnuts and holes on a cookie sheet with a piece of parchment paper. Put the tray in the oven and keep it warm. Turn on the heat for one minute, then turn it off for a nice warm oven. Boil some water and pour it into a measuring jug and place it in the oven with the doughnuts. The hot water will keep the oven moist and warm.

Take the second half of the dough and repeat, rolling it out to 1/2" and cutting out more doughnuts and holes. Place these also into the warm, moist oven.

Frying the Doughnuts

Next we fry the doughnuts! Heat the oil to about 350ºF, using the candy thermometer to get to temperature.

Carefully drop the doughnuts into the hot oil. Watch as they become golden brown on the bottom, then turn them over. Once they are fried, remove them and place them on a paper towel lined platter.

Let the doughnut cool, then roll them in sugar to coat evenly. We made a confectioners glaze (water and powdered sugar) and coated the tops of the doughnuts to make them Kreemy Krispy!

Once you fry and coat all the doughnuts rounds and "holes", your doughnuts are ready to eat and enjoy!
