Fried spring rolls & Bean sprouts & Fried Tofu 🌯🌯🌯

This is my meal for my family, crispy and fatty spring rolls combined with cool herbs, complemented by crispy fried tofu. This is a typical meal for Vietnamese families with vegetables, meat and protein.🌯🌯🌯 Fried spring rolls are a traditional dish of Vietnamese people, during holidays or New Year's Day, there is always this meal in Vietnamese meals. 😄Children are very lazy to eat vegetables, but they love this dish because of the harmonious combination of ingredients. The outside of spring rolls is crispy and fatty, the inside of spring rolls is soft and delicious.😂

Delicious spring rolls are not enough, the sauce must also be delicious, because sauces are very important in all Vietnamese dishes. We use fish sauce for most of our dishes. Garlic, chili, lemon, sugar, water are indispensable ingredients to make sweet and sour sauce.
Ingredient:

  • Carrot
  • Minced pork
  • Egg
  • Fungus
  • Onion
  • Scallion
  • Cucumber
  • Bean sprouts
  • Any herbs

This dish is very delicious with fish sauce and vegetables. Garnish the dish with vegetables and herbs. Cut the tofu into bite-sized pieces, fry the tofu over high heat until the tofu is golden and crispy.

1. Soak the wood ear mushrooms in hot water for 20 minutes or soak them in cold water overnight, rinse them and remove their knobs. Finely chop onion, wood ear, scallions and mushrooms. Mix minced meat with the above mixture and add two eggs (eggs help the ingredients combine better and make the dish more fatty). Add 1/2 teaspoon seasoning, 1 little fish sauce to the mixture, stir well.Ngâm mộc nhĩ trong nước nóng 20 phút hoặc ngâm nước lạnh qua đêm, rửa sạch, cắt bỏ núm. Băm nhuyễn hành tây, mộc nhĩ, hành lá và nấm hương. Trộn thịt xay với hỗn hợp trên rồi cho hai quả trứng vào (trứng giúp các nguyên liệu kết hợp với nhau tốt hơn và tạo độ béo cho món ăn). Cho 1/2 thìa cà phê hạt nêm, 1 ít nước mắm vào hỗn hợp trên, khuấy đều.

2. On a flat surface or a cutting board, spread rice paper over it, scoop out the filling with a spoon into the rice paper, roll tight. If the rice paper is too hard, you should sprinkle a few drops of water on the rice paper and wait a few minutes, the rice paper will be softer. In a pan with hot oil, fry spring rolls until cooked about 5 minutes on each side, you should fry spring rolls on low heat so that the spring rolls are cooked evenly inside. Remove spring rolls to a plate, let cool and then cut spring rolls into bite-sized pieces.Trên mặt phẳng hoặc thớt, trải giấy gói lên trên, dùng thìa múc nhân vào bánh tráng, cuộn chặt tay. Nếu giấy gói quá cứng, bạn nên rưới vài giọt nước lên giấy gói và đợi vài phút, giấy gói sẽ mềm hơn. Trên chảo có dầu nóng, bạn cho nem vào chiên chín vàng mỗi mặt khoảng 5 phút, bạn nên chiên nem ở lửa nhỏ để nem chín đều bên trong. Vớt nem ra đĩa, để nguội rồi cắt nem thành từng miếng vừa ăn.
