RECIPE - "Egg risotto with black garlic"

Hey, everybody. How are you? Today I made a risotto and it came out great and that was difficult because my little baby would not stop requiring my attention, but still this was the result.



INGREDIENTS

  • 200 gr. of intregral rice
  • 1 onion
  • 1 handful of mushrooms
  • 1 can coconut milk
  • 2 eggs
  • 2 cloves black garlic
  • Nutritional yeast
  • Raisins
  • Walnuts

  • Put the rice to boil in water with salt and clove powder for 40 minutes, as brown rice takes a little longer than normal rice.
  • In a separate frying pan cook the onion and mushrooms and set aside
  • When the rice has 20 minutes left, add the can of coconut milk, bearing in mind that when the time runs out, there should be no stock left. If necessary remove a little water before adding the coconut milk.
  • In the mixer beat the eggs with the black garlic. When there are 5 minutes left for the rice to be ready, put in the pot, onion, mushrooms and eggs already beaten and stir without stopping.
  • Finally add a handful of nutritional yeast, chopped nueced and raisins and let stand 5 minutes. Ready to eat and enjoy!
