Cooking with Tajines. Lazyness with more fun!

Some people have endless creativity for cooking. I am not one of these persons, so when someone comes by with awesome cooking ideas for people who are not that skilled.That is exactly what we need. Did I mention that this was easy gives you time in between as well? Well, cooking with tajines is really your go-to place in this one.

Here you see what a tajine is. A plate with a towershaped cover over it, and that tower is exactly where the tajine fun comes from. Heat and moist is produced while cooking the food, and because of the shape of the cover this moist bumps into the cover, letting it rain down again over your food. The perfect way to not dry your precious goods!

So what did I do in this case? I just got a stash of whatever kind of vegetables I could find. In this case eggplant (absorbs all flavours) zuchinni, red bell pepper, pumpkin, onion and garlic. I also added chicken thighs, but if you want this a vegan / vegetarian one that is just as okay. It would not kill your flavour, and because these tajines are small you can even personalize each and every one of them, adding of leaving things out.

Slice and dice everything that you have, and this doesn't even have to be in exact same size. Also it does not matter if you put something on top or underneith, the effect will be the same. It is the moist that does the work, and all these veggies lose tons of fluids. When in doubt you could add a bit of stock even on the bottom, for instance if you add couscous in there which absorbs a lot of fluids. To me, this dish doesn't even need any additional carbs in there.

Now comes the nitty gritty part and which defines how your dish actually tastes and that is adding the flavour powder. This is a mixture of herbs and spices which you can buy at your local middle east shop. Here in the area you have a market dude selling all different kinds of them and he just asks what kinds of flavours you like. It is not expensive and it is really cool how just changing the spices really changes your dish in there. Use about two spoons per plate of these spices and just sprinkle it over your food.

After spicing up your food shove it in the oven at 160 degrees Celsius or 320 Fahrenheit and now you just wait for an hour. Enough time to clean up the kitchen, walk the dog, check your favourite blog and call mom even. After about half an hour take the tajines out of the oven (use gloves, mittens, protection or whatever because these things as SUPER hot!!!) for a bit and mix them a with a fork. Because of this the spices go throughout the whole dish again. Put the cover over it again (dont forget your heat protection again because this is surely still hot) and shove them back into the oven and wait again!

After 1 or 1,5 (the time is not really of the essence, you just need everything to be well cooked through) your dish is ready to enjoy! So what did you actually do to put this on the table? You diced veggies and put them in the over. Not too much of a hassle right??
