Coconut Cookies 🍪 Recipe | Perfect for an afternoon

Cookies, a perfect sweet, of those that you can eat several, but if they have coconut, you eat them without hesitation. Coconut is a very versatile tropical fruit, in salty foods it looks great, but in dessert, it is another level. This time, I bring you some coconut cookies and I assure you that they will be a perfect companion for your afternoons. Lets go to cooking!!


Ingredients

  • 500gr of wheat flour
  • 100gr of cornstarch
  • 1 teaspoon baking powder
  • 1 egg and 1 yolk
  • 250gr of butter
  • 300gr of sugar
  • 1 teaspoon coconut essence (It will depend on the intensity of the essence you use, the one I use is light in taste)
  • 60gr of dried grated coconut or coconut rain.
  • 1 Teaspoon vanilla extract

Preparation

  • In a bowl, add the butter together with the sugar, until it integrates very well.
  • Add the egg together with the yolk and incorporate everything until it forms a quite creamy mixture.
  • Incorporate the essence of coconut along with the essence of vanilla and coconut rain, and incorporate
  • Using a sieve, add the flour together with the cornstarch and the baking powder and integrate in a wrapping form.












  • The dough should be of a fairly hard, sandy and quite manageable texture, but before using it, you should refrigerate the minimum dough 30 minutes to be able to spread it more easily on the table and cut it with the cutter of your choice.
  • bake for 20 minutes at 180 ° C.





  • Once the cookies are ready, the best step of all comes: do not share them with anyone lol.
