Sweet Potato Pie with Maple Glazed Pecans

I haven’t baked a pie in a long time. I have been cutting back on sugar and I did not want to be tempted to eat more than I should. I’ve never had a problem with my weight, but lately I have had a problem with my blood glucose levels being too high.

I went back to eating a balanced meal and my blood glucose levels are under control. I went to the farmers market and I bought some fresh sweet potatoes. I decided to bake a pie and since I still had some maple syrup that I bought while I was in Canada, I decided to add the maple glazed pecans on top.

I used 3 sweet potatoes that were baked first until they started to caramelize and became tender. I peeled and cubed the sweet potatoes in a mixing bowl. I added one cup of organic raw sugar, two eggs, one stick of butter, 1 cup of evaporated milk, 1 tablespoon of cinnamon, 1 teaspoon of nutmeg, and a 1/4 teaspoon of ground ginger. I mixed all of the ingredients until they were smooth, and then I poured them into two unbaked pastry shells. I drizzled maple syrup over pecan halves and added them to the top of the sweet potato mixture in the pie shells.

The pies came out very well, and the taste is delicious. Now I have to find some friends to give the pie away to so that I won’t continue to eat it up.
