Homemade Chicken Pot Pie
I had one chicken breast thawed out to cook for dinner and I decided to use it to make a chicken pot pie. I also had onions, carrots, potatoes, bell pepper, vegetable bouillon, and various spices as well.
I cut up the chicken breast into small pieces and boiled it in some salted water. I added the vegetables, spices, bouillon and about a tablespoon of butter to the pot after a few minutes. I also added some flour to thicken the broth before I put it into an unbaked pie shell.
I scooped out the chicken and vegetables first into the pie shell and then added the thickened broth. I left room in the pie shell for the mixture to expand and bubble up in the covered pie shell.
I plan to cook the pie for around 50 minutes in the oven at 425 degrees Fahrenheit. It smells delicious and the mixture tastes great.
