A Witch in the Kitchen: "Rice with Chicken, Pumpkin and Cabbage"

Hello Dear Witches...!

Sundays are family days, and home is no exception, usually my brother and his wife come to spend much of the day, my other brother is at home all day and we always try to do something different, This Sunday was a good day to share with family, and although my free time was not much, I still tried to make a comforting meal to share with everyone.



While my brothers and sister-in-law were playing with my little Mathias, my parents were distracted watching a movie and I was doing what I like, in the kitchen preparing this delicious rice with chicken and vegetables, the truth is that at home we love rice with chicken in all its presentations, and this was no exception, I love it even more, because it is very simple to do, and is that rice and chicken together combine almost everything and fits any flavor.



I sincerely opted for this recipe because I didn't have much time available, because it's extremely quick to make, in about 40 minutes I had my rice with chicken and vegetables ready, and about 15 minutes later there was nothing left, which is indicative that I look very good, but come with me and I'll show you how I made it. Enjoy! .


Ingredients


  • 600 g boneless chicken thighs, diced.
  • 4 Cups of rice.
  • 300 gr pumpkin peeled and cut into cubes.
  • 150 gr of cabbage cut into julienne.
  • 3/4 Cup finely chopped chives.
  • 5 Peppers finely chopped.
  • 2 Ripe tomatoes without skin finely chopped.
  • 3 tablespoons of oil.
  • 1 Tbsp of salt.
  • 1 tsp ground cumin.
  • 1/2 tsp garlic powder.
  • 1/2 tsp turmeric powder.
  • 9 Cups of water or vegetable broth.



  • Preparation



    • Difficulty level: Low
    • Preparation time: 15 Minutes
    • Baking time: 40 Minutes





    • To start we season the chicken, with half the salt, cumin, garlic powder and turmeric, and in a hot pot we add the oil, I use oil painted with achiote (onoto), which helps me give a touch of color to the rice, seal the chicken on all sides and add the chives and stir to crystallize a little.



      Continue adding the chili and stirring well and then add the pumpkin and continue stirring, at this point add the tomato, integrate and let cook over low heat for about 5 minutes.

          This type of recipes reminds me of my beloved grandmother Pancha, because she loved rice with chicken in all its presentations, and I was always adding some vegetables or vegetables to not do the same all the time, because one of the wonders of the kitchen is that it always allows us to innovate and even give our personal touch to each recipe.

          My goodness this recipe looks and sounds so good!

          I might try some hot salsa with it, or maybe some tomato slices on the side. I know I'd love it just by itself though, no question!
